Hi Cleo,

I made this tonight and it was delicious! Thanks so much! I had 1/4 of the pizza , along with some crockpot chicken and I was quite satisfied! I have leftovers for lunch for the rest of the week and my coworkers will be surprised when I show it to them!

Chick peas would make it a falafel-style crust. YUM!!!!!
You could make a tahini-based sauce and put diced tomatoes and feta cheese on it...
(I'm gonna faint!)

PS - Just had 2 small pieces of "pizza" for breakfast. I'm full and happy!

Hey Paula, 1 cup = 8 Oz but if you ever need conversions just type what you need to know into google and it will come right up for you

I believe that only relates to liquid. However, I could be wrong...won't be the first time. I know Alton Brown prefers to cook according to weight. He says it's more accurate.

I used a scientific scale to weigh the foods while I cooked, but I am willing to stand corrected if someone else has other numerical values. I don't pack food down, so that could account for differences in weights?

I used 4 ozs of mozza. It turned out great! It was stable enough that I was able to eat it with my hands.

I've been just guesstimating it since The bag has 2 cups I just use about half. Oh man, if it comes out good with only half of that I have enough to make another one!!!!!! Thanks emeraldskye!

Usually the 8 oz bags of shredded mozzerella say there are 2 cups in them. I know the old adage is a pint to a pound, but I think the bag measurements are more accurate in this case. 1 cup is 4 oz of shredded cheese.

Cool! I know I had a hard time finding three bags of cauliflower in one store. I brought them all home and then was too tired to cook! LOL The pizza keeps well, so it's just as good the next day!

My kids said the same thing, and then they ate all of my pizza. The good thing is it's pretty quick to make more. Making a real dough with yeast is a lot more time and effort. This is just nuking cauli in the microwave, shredding it (or processing it) and then mixing it with the egg and cheese. It has to be easy, or I couldn't make it.

I'm not technical. LOL

LOL! I had oopsies come out flat today (I know what I did wrong, though).

My little one came in and said, "Are those your rolls?" I nodded. She said, "Now I know why you call those OOPSIES!"

I've made many, many LC pizza crusts/dishes. I made this tonight and it was sensational. Very, very good and I could easily pick it up with my hands. This is a keeper.

Hey there, Carol:

Haven't tried the pizza with the freeze-dried cauli yet because I have been out of town while this thread has been developing, but I'm definitely gonna give it a whirl when I get back. I'm considering that the freeze-dried might make an even crispier crust than the fresh or frozen because I can control the moisture level.

Yes, the Emergency Essentials site does have some interesting stuff for us low carbers, including peanut powder/flour. I believe that it was KevinPA who directed me to this site a while back. I find that the freeze-dried cauliflower "pearls" as they call them are the closest thing to popcorn in consistency and crunch that I have found -- just grab a handful from the can and sprinkle with your favorite popcorn seasoning or butter and you're all primed for some comforting repetitive hand-to-mouth snacking

I love the idea of using them for popcorn!
