I rice my cauliflower in the food processor before I put it in the microwave. I save my knuckles that way. Works very well.

I went to WalMart and they had only ONE bag in the entire store, so I actually had to go somewhere else, too. Cauliflower isn't in great demand, frozen-- save for when I want it. My son said someone locally was using my recipe and bought all the cauliflower. lol |

lil miss- As awful as it probably is to come up with a lot of substitutes for generally unhealthy foods, I really enjoy it! To be able to eat things we've missed in the past is such a blessing. I really enjoy trying different things, and the pay off is when my family eats it, and then says, "what was that?" and then, "will you make more?"
That's when I know this is a lifestyle my kids can continue to enjoy into adulthood! I have an idea for faux cheetos, but I'm not sure how much you might like it. Let me look into some things.

Cleo, you are too sweet! I was just kidding about the cheetoes! Yanno, Jerry Seinfeld's wife just wrote a book about subbing in healthy stuff in mac n cheese etc. While I recognize that I am *trying* to get to "all" healthy eating I find nothing wrong with being able to put my burger on an oopsie or get to actually eat pizza with my family again! THOSE things, these inventions of yours, help me feel more "normal" and like one of the gang. Also, as you mentioned, WAY healthier for EVERYONE!

Cleo...I thought I loved you for the Oopsie rolls but I didn't know what love was until I tried the cauliflower pizza! Wow! I ate two pieces and I'm hiding the rest! I was also able to pick it up and eat it. Just added some red pepper flakes and I was good to go.

crmcdonald - I was afraid of shredding my fingers so I used my little food processor and it turned out great. I set it to shred for about 3-5 seconds as I didn't want it mushy.
