Cleo! Oh my - so delicious! I made a double batch, using half to make a 10" pizza and made mini pizzas in my mini-muffin pan. I served the mini pizzas with my marinara sauce. My 3-year old ate the "baby pizzas" without the sauce, but he ate cauliflower!!! So wonderful! Thank you!

How many muffins did one batch make?

Did you bake them the same temp 300 ~ at 30 minutes?

What changes if any did you make on the mini muffins? Is that cheddar cheese in there.

I am visualizing a faux hash brown pattie in the muffin top pan, with cheddar!

When I experimented with the bread sticks in an effort to make croutons I ended up with tater tots--made of cauliflower. They were pretty decent.

I'm sorry for the delay, had no time to play on the computer today at work.

Ok, so I doubled the recipe, and I made one 10" pizza and and 24 mini pizzas. I used a small cookie scoop to make them all the same size.

We had a baby shower at work on Wednesday, and I had tons of cheddar cheese leftover, so I used up the cheddar in the pizzas. I had a few pieces of pepper jack, so I made 2 minis with that - spicy goodness!

I baked them at 350 degrees for about 20-25 minutes or so. I like the crust really brown, so you might want to bake them for less time. They were delicious plain, but with my marinara, they were out of sight! My husband and 3 year old son loved them and had no idea they were made with cauliflower - I surely didn't tell them . I plan to make them for Easter appetizers.

I will definitely try the mini muffins.
I want to try it in the muffin top pans also as a faux hash brown pattie.
With cheddar!!

Only problem is, I don't have one!!
But, I do have the mini cake pans. I use those all the time in my toaster oven to make the bowl muffin. Delish!

Cleo...The tater tot idea is good too.
Nice little bite size morsels!!

I love all these ideas....keep sharing!

I just made a huge cauliflower pizza...sorry no pics...but I roasted the veggies like you did Cleo...I baked it in a convection oven for 20 minutes (nice and crispy)...got 20 pieces! Thanks again...!!!!

I thought terrible 2's meant when they are two they are tough to deal with... really means you now have TWO YEARS of trouble - cause three was worse than two!!!!!!!!!!!!!!

I made mine with an 8-inch cast iron pan. Kind of like a pan pizza. I have pictures. I will get them up as soon as I can. I ate the whole thing, but I used left-over cauliflower from last night, not a whole package. It's 10 a.m. so this is breakfast and a snack! What a great recipe; by far the best low carb pizza recipe! Thanks!
