If you have coconut flour, run to your kitchen and make cheese biscuits
We were talking about coconut flour earlier and I decided to finally try the cheese biscuit recipe that keeps catching my eye.
TIANA Organic Coconut Flour Recipes My oh my I don't know why I waited. These are so yummy. They taste like regular cheese drop biscuits. I used the recipe except I added 1/4 tsp of garlic powder and insead of 1/2 cup cheese I used 2/3 since they said increase if you like cheesier. I havent counted up the carbs yet but they should be pretty low because the whole recipe makes 8 huge biscuits. When my muffin top pan arrives from amazon I'm going to try to make them in there, spread thin. I think these could be an acceptable burger holder. The cheese seems to keep the coconut flour from getting too crumbly. |

I took some pictures
If you look closely you will see there are only 5. I had 1. My high carb husband had 2 and he rarely likes any low carb baked anything. He didn't even ask me what was in them. He just followed his nose into the kitchen and grabbed one off the pan.
I could have left mine in to get a little browner. I was worried about the bottoms but they were just crispin up because of the cheese. Next time I'll leave them until I see a little more brown on top. |

I have coconut flour that's been in the freezer for a while now. Most of the recipes I read don't have rave reviews, so I want to try this one. Thanks so much!! |

I tried these tonight and they are fantastic!!! My only addition was garlic powder to the spice mix...

Thanks for the link to that site -- there are some recipes there that I haven't seen before.
I've had trouble making too much use of my coconut flour because I don't want to use the volume of eggs usually called for in the recipes. Do any of you know if Egg Beaters can successfully be subbed for the eggs in coconut flour recipes? Thanks! -Retroworx |

Cheese Biscuits Ingredients ¼ cup TIANA Organic Virgin Coconut Oil or butter, melted 1/3 cup sifted TIANA Organic Coconut Flour 4 eggs ¼ teaspoon salt ¼ teaspoon onion powder ¼ teaspoon baking powder ½ cup sharp cheddar cheese, shredded Method Blend together eggs, butter, salt, and onion powder. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Fold in cheese. Drop batter by the spoonful onto a greased cookie sheet. Bake at 205 Degree C (400F) for 15 minutes. For a cheesier biscuit increase cheese to ¾ cup. Thanks very much for posting, Abie! I'll have to try these! ![]() |

These are fantastic! I made them yesterday and I also added a litle bit of garlic powder. I thought they beat the stuffins out of Carbquick Garlic Cheddar Biscuits. I made mine in a muffin top pan and they were so pretty. Thanks so much for posting this recipe!

Thanks Nigel....for the info! If you try some of these other recipes, before I do, please post and let me know how they turned out. Like I said, almost every recipe I've heard of with coconut flour, turned out too dry. I'm going to try these tomorrow for sure!!!

I just HAD to make these last night as a friend of mine recently gave me a bag of coconut flour - as long as I shared whatever I made with him.
![]() So here's my review: I got six good sized biscuits from this recipe - and - they were prett-tay good! I haven't had a biscuit of any kind in forever and these were just sooooo good to have last night (and one for breakfast!) However, I think they need some tweaking yet. They sure smelled and looked like real cheddar biscuits for one. and were the right size and consistency mostly - little more bready than biscuity. They are a little dry in the mouth, and for that I think that I would up the fat in them a bit next time. But then, coconut flour usually ends up a bit dry I hear. I also think more added fat might sort of "fry" them a little more? Meaning, like make them crumblier or something? I'm not sure. They ended up with a slightly strong coconutty flavor, but I think that's because I used my Nutiva coconut oil for the fat in them which also tastes reather coconutty to me, so next time I will only use butter. I'd also up the cheese I think, because I would like them even cheesier and again, a little more crumbly. I'd also up the spices some and maybe add some parsley or chives to add some dashes of green in. So overall. Awesome. Easy. Really easy and quick actually. I can't wait to make them again and see how the next batch turns out. And this is TRULY the first really BREAD kind of item I've had in forever. I'm really looking forward to spending the weekend with my new friend coconut flour! |

SwitzBride...I too made these last night. I used butter and they still tasted a lot like coconut to me. I'm not complaining though, because I LOVE anything with a coconut flavor. The only thing I did differently was, I didn't have sharp cheddar cheese, so I used a 6 cheese blend, from a package. Maybe the sharp cheddar cheese masks the coconut flavor, when it's used. Does anyone know?
While these were really good, the taste of coconut and cheese didn't thrill me. I wish they could be made without using cheese. I wonder if cream cheese could be used, some how? Does anyone know??

You can just take unsweetened coconut flakes and run them through a food processor. It might not be quite as smooth as the regular flour, but I can get the flakes cheap and can't find the flour.

I just had to make a batch of these after all the good reviews. I put 1/2 teaspoon of garlic powder and 4 ounces of sharp cheddar cheese in mine. They're not dry at all and they have an almost deep-fried crunch on the outside when they're hot from the oven. I baked mine in a muffin top pan. I'm sure they'd work on a baking sheet but make sure it's got a rim or the grease could run over the edge. They also spread a bit as they bake so don't flatten the batter too much. I left mine mounded.
I can taste the coconut a little but it isn't too distracting. I think that the extra cheese and garlic may help to mask it. ![]()

These are the counts for the way that I made mine:
4 eggs 1/4 cup butter, melted 1/4 teaspoon salt 1/2 teaspoon garlic powder 1/3 cup coconut flour, sifted, 1 1/4 ounces 1/4 teaspoon baking powder 4 ounces sharp cheddar cheese, shredded Per Biscuit: 204 Calories; 18g Fat; 10g Protein; 5g Carbohydrate; 4g Dietary Fiber; 1g Net Carb Per 2 Biscuits: 407 Calories; 36g Fat; 20g Protein; 10g Carbohydrate; 7.5g Dietary Fiber; 2.5g Net Carbs |

Hmmm, they didn't taste "coconutty" to me at all. And I used mild cheddar since I don't care for sharp. They were wonderful and looked a lot like Linda Sue's. Nice and kinda crunchy on the ouside edges.

Abie...you could be right about the brand of coconut flour. I have Aloha Nu brand.
LindaSue....thanks for the carb counts. I didn't realize these were so low carb. Now I love them even more! ![]() Nigel.....I had swiss cheese too and didn't think it would taste right. Darn! Anyway, I might try adding some cream cheese on the next go around, along with a sharp cheddar. I did like them as they were, but think they could be tweaked just a bit more. For me anyway!
