Thanks for bumping this. I never really liked the CQ cheddar ones that much, so will try these soon. I think the "sharp cheddar" will give it more of a cheesey flavor..I will use butter instead of the COil, too.

I made these this morning and I guess I was expecting too much. The dough smelled good. After cooking the biscuits looked good but when I tasted them, eew. They were really eggy and I could taste the coconut even though the flavor was flat. I've tried the CQ biscuits and feel that these don't compare but then again I don't mind the flavor of CQ. I know there are a few people that are sensitive to it.

Boy it's funny how our taste buds are so totally different

I tried Linda Sue's recipe using butter and not coconut oil and they turned out very nicely. I did double the amount of Cheddar Cheese. Didn't taste like coconut at all. They were too dry, though. Anyone know how to make them more moist? Thanks.

I would try baking them less time or add more butter or cheese.

I don't recommend using coconut oil in these because that would enhance the coconut flavor even more.

Mine were pretty good but I think they needed some more cheese ( I used 1/2 cup of sharp) and salt to help them sing a bit. I added some dried chives but they were pretty old and didn't do much for the biscuits LOL
Next ones I will go to the herb garden and snip some of my garlic chives and add them and see if it makes a difference

Linda Sue are your counts accurate for the rolls after you adjusted the carb count for the new coconut flour?

Yes, I think they definitely need more cheese than that. I used 1 cup (4 ounces) and I think they might be even better with a bit more than that. Less than that and they'd be too dry and taste too much like coconut.

I think coconut flour can be hard to work with sometimes because it acts like a big sponge taking up the liquid in the recipe. I got my sharp cheese today, so will make them tomorrow.

I've made these, and like Linda Sue, use a whole cup of shredded cheddar, but...

I place 1/2 a cup of the cheese in my food processor with the coconut flour & baking powder, and pulse it til the cheese is "ground" up as finely as possible....Then add the rest of the cheese and other ingredients....

I've never noticed a coconut flavor when I do this.....something about the cheese particles really combining with the coconut flour, I think....totally masks any sweetness for me....

Plus, I use a large clove of fresh garlic, minced incredibly fine....a more pronounced flavor than using the garlic powder, but I love it....not overwhelming....

I like that idea too. Do you think it would work to throw the garlic clove into the processor along with the coconut flour and cheese? It might make the mixture kind of wet but it's all going to be mixed together with other stuff anyway.

Okay..These came out great..

My recipe was the bascially the same as the original, but instead of 1/2 cup of cheese, I put in 1 1/2 cups of the cheese and used butter instead of the coconut oil.

I put them in Pammed regular muffin tins and baked them at 375 for about
12-15 minutes until edges were brown and tops were firm. Very moist and delicious!!!
They made 8 muffins.

Yum Carolyn...I made my second batch and like them better than the first...did it with 1 cup of cheese and some garlic chives from my herb garden
Took two of them to Wingers for lunch and ordered the loaded chicken. I pulled out my Chedder Biscuits and made a sandwich with half of the chicken and the waiter just had to know what the heck I was eating LOL
Was very yummy but I ended up taking about 2/3 of the meal home withe me and my youngest DS enjoyed the leftovers on two more of my biscuits.
A success!

I'm sure they'd work on a baking sheet but make sure it's got a rim or the grease could run over the edge. They also spread a bit as they bake so don't flatten the batter too much. I left mine mounded.

I can taste the coconut a little but it isn't too distracting. I think that the extra cheese and garlic may help to mask it.

Linda, your photo & description reminded me of DONUTS... do you think sweetening the batter & maybe adding some sf jam and cream cheese instead of cheddar would make a CHEESE DANISH???

Why don't you give it a try and let us know how they turn out? Cream cheese would work differently than cheddar cheese but it might still work. One thing it might do is make the batter a lot thinner. If that's the case then I'd use a muffin top pan for sure.

These came out excellent! Thanks for the recipe Next time I will double the cheese. I used mild cheddaras I'm not very fond of the sharp and added some garlic powder. I did not notice any coconut flavor but I used butter instead of CO oil as I had a OMM this AM and didn;t want to overload on coconut for today..lol. I also used unsalted butter so I might add a bit more salt next time.

I made these tonight and they were good. I used 1 cup of cheese and a bunch of garlic powder and onion powder too. I also added some parsley. I baked them for 14 minutes and they were perfect. I could taste the cocnut a little bit but not enough to mind. Kiddos didn't care at all. They loved them too. This one is a keeper!

Omg, I made a sweet and savory variation of these. So good! The garlic cheddar biscuits don't taste a bit like coconut if you go heavy on the garlic and sea salt. My sweet variation had vanilla, mozzarella cheese (so mild!), and stevia in it. Perfect for pb sammich. This is the BEST low carb bread I have had so far!

Coconut flour makes perfect pancakes as well. It is so underrated!

After reading this, I opened my bag of coconut flour and tried the sweet version. I used mozzarella cheese and sweetfreez in it and it was yummy. Probably could have used a little more sweetener next time. A cross between a biscuit and a cookie. Very bread like. I don't know if I like them better warm or cooled 'cause I couldn't wait and they still haven't cooled yet.
Definitely a keeper !!

^Coconut isn't on induction I don't think. Cleochatra's oopsie rolls are, though! There are a couple of recent thread regarding those.

Glad you liked the mozz version! It is bread like. The sweet variation has the texture of cornbread. They are great cooled as well. I'm thinking a grilled cheese sandwich would be nice on the savory biscuits. That will have to wait for the next batch since this one is gone... blush:

Btw, mine spread out like a pancake so I cut it into large squares for bread. Very convenient!
