Cheesy Crackslaw

Hi everyone! I've been away for awhile but now I'm back and if feels great to be back on track!
I altered the original crackslaw recipe last night and it was really good! I don't know if anyone else has done this, I've been gone, but I really liked this!
Here's what I did:

3/4 lb hamburger
3/4 bag of broccoli slaw
1/2 onion- diced
2 cloves garlic- pressed or chopped fine
1 Heaping TBSP sour cream
1 big handful shredded Mexican Cheese blend (or whatever you have)
2-3 Tbsp heavy cream
1/2 tsp chili powder (more or less to taste- I just sprinkled it on so I'm not sure exactly how much I used)

Brown meat and onion in pan. Drain. Saute broccoli slaw in a large frying pan with a little bit of water until slightly softened, but not soggy. It'll still be pretty green. Drain if there's any water left.
Add garlic to the meat and add the remaining ingredients and stir until melted over medium heat. Add the broccoli slaw and mix well.

Enjoy!

Hi Carolyn! Thanks for the warm welcome It's good to be back! I strayed for awhile. After 3 years of low carb I needed a little break. So, with that break I gained 15 lbs! I'm on day 11 of induction now and I feel so much better! I'm ready to get down to business!

Hope you like the crackslaw! It's called that because it's so addicting! Awful name huh? You can add more spice if you like, or use different spices or cheeses. It's the kind of recipe you can just use what you've got! I love it!

Yes, I've heard of the soy sauce version. That's good to know you can make it with cabbage too. Have you tried it with the cheese and sour cream? It's so good! It ain't pretty but it's yummy!

I made this for dinner tonight and we really liked it. I have finally found a way that I can eat broccoli!!! I've tried broccoli numerous ways and could never tolerate the taste of it.

Made this today. It was good but a little bland for my taste...so I added extra chili powder, a little cumin, salt and pepper. BUT the awesome thing was topping individual servings with hot chili sauce ( I use Sriracha) a little extra sharp cheddar and a dallop of sour cream.

The possibilities are endless for seasoning this dish. I'm glad you added more spices to make it work for you, I don't like things real spicy myself. Glad you liked it!

Good point! When I made it, I just portioned it into 4 bowls for lunches and it sat in the fridge overnight. I think that the flavors combine and you're right, it's probably better on day 2!

I can't find broccoli slaw in my town, so I have to shred broccoli to get it. Could someone tell me the net weight of a bag of broccoli slaw, so I'll know how much shredded broccoli to make when I want to make crackslaw? I'd be very appreciative for that bit of information! TIA!

The one time that I bought it, it came in a 12 ounce bag. It also contained some carrots and red cabbage. A friend of mine shreds her own broccoli stalks and says it works just fine. Here's a photo of a salad that I made with broccoli slaw so you can see the consistency of it. It's a bit like little match sticks in size rather than fine shreds.

Thank you, Linda Sue! When I made the filling for the baked spring rolls for my birthday, I made too much! I think I ended up with about twice as much as I needed. I tossed it into a casserole later that week, and it was good. Still, it's better to know how much shredded broccoli I need to make!

I finally got a chance to make this today and it was great.
I used 1 lb of hamburger, a whole bag of broccoli slaw, and increased the sour cream and heavy cream a tad.
I also made it a 1 pan operation by cooking the burger, onion, slaw, and garlic all at once until the meat browned and the grease was gone. Then I mixed in the rest of the ingredients.

I see now why they call it crack slaw.

Broccoli slaw? What's it all about?

Thanks, LindaSue, for giving us a measure of vegie ingredients for this recipe. Looks as if broc-slaw is a great way to use the massive stems that come with mature broc. As I read up on broc, it's clear that the vitamin quality diminishes as one moves from vitamin-rich broc sprouts to leafy broc rabe that one finds in Asian dishes. Makes one want to sprout seeds or seek leafy broc rather than settle for the mature broc with a full head of flowers or florettes and a massive stem that has little nitritional value and is most of the weight in any purchase of broc stalks.
