Praline Pecans

Wow, these recipe looks awesome. I want to try them in the filling on one of those danishes. If I do...I will post pics.
Maybe in the a.m.

1/4 cup heavy cream
1 cup Splenda
1/2 tspn cinnamon
1/2 tspn vanilla
3 cups pecans

Combine all ingredients except for pecans in small saucepan. Cook over med heat til sweetner and spiced are well combined. Stir in pecans. Cook til pecans are completely "sugared" and there is no liquid left in pan. Spread on wax ppr and cool.

2- 8oz pkgs cream cheese, softened

Using an icecream scoop, drop one full scoop into 12 muffins cups. Bake for 20 minutes. Let cool. Refrigerate & enjoy.

About 2.5 carbs each (if I calculated correctly)

(PS-there really were twelve, but I ate one, hubby ate one and the floor ate one )

Renee - Just made the Praline Pecans. Only had a cup of pecans so I did 1/3 the recipe and heated everything in the microwave. Heated one minute...stirred and heated one more minute until it was a thicker consistency and added the pecans. They are cooling right now but they smell so good. I can't wait to try them!

Mine stayed a little sticky, maybe I did not cook them long enough, but I sprinkled a packet of splenda and cinnamon in the container and tossed it around. Seems fine now. There are quite tasty!

When I spread these out to dry they were indeed sticky for a while. I think it was becuase my kitchen was warm from doing a good bit of baking. However, by the next morning...I did have some left by the next morning...they were dry and not sticky at all. I put them in a tin with a lid and I'm seeing this as a holiday gift for my low carbing friends. By the way, I didn't have any pecans so I made them with walnut halves. Not only did they taste good but they looked pretty as well. This is a keeper.

Oh yeah, for the holidays it would be perfect to make these with a delux nut mix. Hope I remember it by then! LOL

YumYum... we had just bought a big bag of Pecans at Costco on Sat. i tried this last night and we ate them up!!!! Thanks Renee
Finally somethng sweet that i can grab a few of and be satisfied.

I was thinking about add some dark choc to the milk while it was heating up and leaving out the cinnamon. I will letcha know if I do. I am hiding the others for now or I will eat the whole batch!

These are very good..I used brown diabetisweet instead of splenda and they are scrumptious! They are a bit tacky but that makes them even more yummy!

Now for the chocolate version...

Perhaps adding some cream of tartar would help with the stickyness. It is required for making the coating for candy apples hard.

I was hesitant about the liquid splenda but I think the QP would be fine.

I made these and used the QP and it worked fine.....but...they are still a little sticky. I will try the cream of tarter next time too.

How do you all store these? YES...I did have some left. I'm wondering if they need to be put in the fridge. They seem a bit "moist" and I'm afraid they will mold rather quickly. Any thoughts on this???
