The mozzarella stick recipe I came up with years ago when I was posting elsewhere. I was gacked out on eggs in induction, and had to try something with the pork rinds because I had a bag going stale and wondered if they could be used as breading. I added spice to it, because I didn't want to taste it-- and I was shocked with the results.
Not spongy, chewy, porky, rindy, or anything! I am sure other folks have made these on their own, aside from me, though! Pork rinds are one of those things people tend to have to find something to do with. (Unless you are our friends like ferenghi who like them plain on the home world. Ghastly! Ghastly!) The "WING" recipe comes from a really good friend of mine who I never realized also used pork rinds as a breading! Just yesterday I asked her, "What was that recipe you used to make that everyone loved?" And she sent it to me. I was like whoa! Pork rinds again! I used an entire bag on both the sticks and chicken! This is good, because I didn't want any left over. (lol) sassy-- These are so good, my kids actually asked if there are leftovers! Lean-- Hey! Even if you like pork rinds, you won't even notice the flavor! And you have the cutest. baby. ever. Rory-- Hey! Are you calling me meshugina? Who's to say I'm in Buffalo? I'm the size of one! Isn't that close enough? No kvetching. Perfectly-- they are super-good! Let me know if you try them! Amazin'-- I love you too, my friend! Mayberryfan! LOL!!! You Razorback fans... I think it's great! Traz-- I'm always looking for something new that I want to eat. Yesterday I was in the mood for mozzarella sticks, and have some in the fridge, so I went for it again! And then I emailed my really good friend Kimberly and while we discussed stuff, I sat on her bladder and bounced up and down on it and she gave me her wing recipe. I just didn't realize hers was also pork rinds! haystar-- G-d forbid. I'd be the fat one. amy-- that's what I thought. They smell like ripe butt, but woman, do they cook up like something darned awesome. You never even notice the rinds post-cooking. If you did, would my picky family eat them? Heck no. bav-- We usually eat around 6:30 (lol) I love your avi by the way! Tecno-- I despise pork rinds. I'd rather have a colonoscopy than eat one. So I'm serious when I say these taste AWESOME after cooking. Folks at my house had no clue it was pork rinds! gettinserious-- Yeah... I didn't catch that when I wrote it, but it's cracking me up now! jacks-- not as gorgeous as you, but mighty tasty when dipped in sauce! rottinluv-- Do you bake the bigger pieces? Almond-- they are just perfect as a coating. They stink to high heaven in their grody-bag-form, but post-cooking, you'd never even know what it is. It's just really good, and the chicken was so savory! Debralynn! You're calling me bossy and all I want is to sniff your avatar. A friend of mine is making these for her Super Bowl Party too! Let me know if you come up with better sauce additions! ~ your bossy friend Shimmer! I lovelovelove BtVS! And Angel, I might add! I own most of the seasons of Buffy on videotape now! Before, I had to rent it through netflix. I tried doing the same thing with Hercules and Xena, but Whedon didn't write those. I finally realized I'm addicted to Whedon. Firefly is another series I love!

Briar-- What a blessing-- and yet, a tragedy. And yet, what a blessing! lamv-- tell me what you think of them! jeerzree! Thank you! And the best part is that my kids love this, too! Even my picky autistic nippers. Tommyswife-- LOL! I am so sorry! The good news is that it's cheaper than eating out. I think the entire chicken recipe only cost me less than $8, and there is sosososo much. One bag of pork rinds made 4 breasts cut into bits, and 3 mozzarella sticks! Pretty Pauls. You can cut cheese sticks out of a block of cheese and have roughly the same effect. |

I've been meaning to try pork rinds on mozz sticks b/c I've been doing pork rind as a breading on fried chicken for months. My family LOVES it. My husband says he doesn't care if I never go back to flour b/c he prefers the pork rinds.
I don't really care for pork rinds myself either....but as a breading, they ROCK!!!! It comes out so crispy and tasty and it keeps the juices in the meat intact. Definitely give it a try! Last edited by Froggyjean : 01-25-2008 at 06:46 AM. |

Ok, cleo, these look DIVINE, and, I being the southern belle I am, love pork rinds right out of the bag. Bar-B-que is extra yummy. I also checked your blog, and just had to say, it made me laugh out loud at my desk. So I am sitting in my office hee-hawing about the flu epidemic at your house. knox-- I am glad I'm not alone on flu (though it'd be great if none of us dealt with that!). It's liking putting out forest fires. Only instead of fire, it's stomach contents, and instead of a fire hose, it's the hose of a carpet cleaner chasing people around the house.
I really need engineered wood floors. Let me know what you think of the cheese sticks! Make sure to leave them in the oil long enough to get them good and browned, and have the cheese melty, but not leaking... Mmmm.... They're even good cold. |

I will give pork rinds another try because these recipes looks so good. I really can't stand them. But maybe the flavor isn't as strong when on something else.

lildragonfly: When the cheese has been in the egg solution and then placed in the bag, you press the bag around the cheese while holding it and molding the crumbs to the stick in your palm (on the outside of the bag), which pushes the crumbs to the cheese. I push firmly, and the crumbs adhere. The crumbs aren't strong enough to permeate the cheese. You just want to press it firmly to the surface.
sappl-- The pork rinds aren't a noticeable flavor post-frying. I have very picky autistic kids, and they didn't even know-- and they hate pork rinds. They loved the chicken! |

I actually saw a plate of the wings next to a plate of breaded shrimp, and both looked exactly the same-- so I'm sure you could bread your shrimp this way, too! |
