Guess I may have posted this to the wrong thread perhaps...so I'm gonna copy/paste it over here from the stickie at the top. Sorry to repeat, but I just wanted to share them with everybody for sure...
Ohmigosh, Cleo! I've been following this thread from the beginning, and enjoying everyone's creativity with these little gems! BUT...just had to tell ya: On Tuesday, I made "Pascke-oopsies!" ...hadn't had pascke in YEARS!! (hope I'm spelling it right.) I'd seen them in the stores of course, and was still thinking about them when I got home. I'd already made some nice-sized oopsies in my muffin-top pan, so I took a skinny little knife and poked into the side of the oopsie, and moved it back and forth so as to create a pocket inside the roll. Then I made a cone of some waxed paper, put some s/f jelly inside the cone. Snipped off just the tip of the point and filled my oopsies thru the little holes in the side. I did a couple each of blueberry and raspberry, and frosted with some sweetened cream cheese...and they were WONDERFUL Hubby loved them too...and he's not LC-ing! Sorry I couldn't have gotten here sooner to share it for Fat Tuesday...but it's gonna be Fat Sunday in the morning when we repeat them for breakfast!! So maybe others will want to try this too. They look alot like HC bakery rolls... and the taste isn't all that far from the real thing either!! Thank you so much for sharing these! They're terrific--I hate to be without at least a couple oopsies in my fridge cuz they've become a staple around here!! Bless you, Girl! Jenn |

wow-paczki! What a great idea!! I used to love those. Deep fried of course. We used to eat them with prune filling, but also lemon. I am going to try your idea and insert lemon curd into them and glaze with an erythritol icing.

Hi, Jenn! I am so glad you've found your use for oopsies! That sounds tremendous! I might have to try that. I almost bought a muffin top pan this weekend, but I'm such an oopsie purist, and I'm trying not to change things very much. I wonder if I could slice an oopsie as is.
I'm wondering if one could also fill these with whipped whipping cream by cutting a small hole and then extruding the cream from a cake icing bag... |

Cleo, I'm so happy--made the oopsies with mayonnaise,2 T flaxmeal and some onion powder. Baked for 40 minutes and wowsa. Toasted one this morning and ate it with a shmear of cream cheese and some smoked salmon. Can I say bagels and lox.

Pat-- I wish I could try mayonnaise, but I ate so much of it the last time I followed Atkins, I can't even look at it.
Still, I am glad you've found something that works that you like. That's what low-carbing is about--finding something that works for each person according to taste. I also try to stay away from flax seed meal unless I need it for fiber purposes (extended induction here)... I guess I am an oopsie purist. (not that there's anything wrong with that) |

Cleo, FYI- Farberware at the outlet mall in Castle Rock is going out of business(saw a sign as I drove past yesterday)- they may or may not have muffin top pans, but everything is supposed to be on sale...

luckiangel, I had an idea with your waffle. I bet a choco taco could be made with the waffle. What made me think about it was I just drizzed some chocolate coconut bark on my Oopsie roll to seep in, then I added 3 small scoops of sf lc vanilla ice cream on top then drizzled more coconut bark on top of the ice cream and folded my roll like a taco and ate it. It was good!
I was wondering if the waffle when it was still warm be folded like a taco then dipped or drizzled with the chocolate co bark, put in the freezzer till it hardens some, then added whipped cream in the middle, and more cocb, freeze again then eat. These rolls could be used for ice cream sandwiches too!

I've got reuben sandwiches on the menu for this weekend. I'm going to try and add a tablespoon or so of flax to the oopsie's to see if that will make them a little sturdier.

Mallory, my ice cream sandwich was very good! But I would like to use whipped heavy cream instead, and maybe freeze it. Save on carbs.

I take my sweeter rolls and get the redi whip and put little puffs in the middle of the roll. Put that in the freezer and oh man, is that good!!!
It is like a little cream puff. I am loving all these ideas...........you people are great cooks!! |

I made a batch last nite adding Italian seasoning and garlic powder with shredded mozza on top..they were perfect for a pizza crust! And I left one plain to experiment on..no spices but mixed brown diabetisweet with cinnamon and sprinkled on top to bake, when just out of the oven, I drizzled some melted butter on top..my dd said it smelled like a mini donut
..However, the butter and brown sugar went kinda crunchy and very tasty!!! I was going to put a few praline pecans on top but I ate them while these were baking ![]() |

[COLOR="Navy"]Hi. I posted my recipe for oopsie's with cheddar cheese/cream cheese and dried (reconstituted)onion flakes on another thread, but figured I would share them here, too. DH and I had then with burgers tonight and they were amazing! It was his first time eating any kind of oopsie roll and they were a hit. Here's a pic of the batch I made last night - I also let them sit out over night and then put them in the fridge (they didn't get sticky). They are just tasty as can be.
![]() We're going out with friends on Sat night, then back to my bro-sis-in-law's home for dessert. I just emailed them and asked if I could bring a light and tasty dessert. No reason to tell them what it is - it'll just be a yummy surprise. I can't decide whether to do the strawberry cake or make mini-strawberry shortcakes. I bet the cake would be delish with lemon jello and fresh whipped cream and juicy strawberries. So many options - this recipe is amazing. ![]() I also want to make the "pigs in a blanket." I might buy the mini-franks and make up a batch for my ds - he LOVES those, so it'll be fun to see his reaction. I am soooooooooooo glad I found this recipe. It's already a staple for me. I'm bringing french toast with me to work for breakfast, with a side of bacon. I did that today and it was great! Anne [/COLOR]

Needn-- They can be cakey just by making them in a pan versus on a sheet. Some add xanthum gum, and others use a bit of protein powder. Most folks don't add anything to change the texture.
You could, however, if you're making the strawberry cake, add the package of jell-o mix. |
