I took a few suggestions from some a few of the oopsie threads and tried a Super Bowl Snack
Started with regular oopsie recipe I added 1 Tbls dijon mustard and garlic salt to the egg yolks, omitted splenda. I sprayed my silicone mini muffin pan with pam and dropped a rounded TBLS full of batter in each. Then I cut hot dogs into 1/4's and put a piece in each muffin. Baked at 300 for 30 minutes. I thought they would be done sooner but it did take the whole 30 minutes. They are a little fragile, a few of the hot dog pieces want to fall out so they need to be handled carefully, but they taste good and I think are pretty. I also had enough batter left to make 2 oopsies I have a mustard dressing that I make in the bowl. |

Hello ladies.... I have not been on since early Nov. (different thread) and in trying to find my way ... hopped in on "shadowzip" (
you gals look like a nice fun bunch too ! and the px of the food, well, just incredible...... I will show my DD, (she too is a member) we got busy, crazy, and Christmas , and I have put 10 of my 30lb loss back on, so BACK ON TRACK ..... I AM.... if I may..... this looks like a great thread too ! |

Lora-- I've never tried them in the microwave. That's not to say you couldn't give it a shot, though! If you do, I'd try smaller popover sized ones just to see how they did. Then you could experiment...

I was thinking they'd make a good sub for the wraps by Pillsbury, but haven't tried them yet! Wrapping the hot dog with cheddar and then putting them into the oopsies is something I want to try.

I also gained over the holidays. 13 pounds, actually. Now that is off and the rest is falling off too. These rolls really help when you want something quick. Just ate one as french toast.

Lunch today:
Tuna fish on oopsie with onion, lettuce, and tomato. Warning: This is very good. Do not let your 8 year old son talk you out of a bite so that he can try it. He will stare longingly at your sandwich as you attempt to eat, all the while letting his food sit in front of him because he no longer wants it. He wants yours. I gave in about 2/3 of the way through my sandwich and let him finish it. The little begger. |

Tuna melts are on my menu this week!
I just made a batch (this is my 3rd time making them) and used 8 eggs and 8 oz cream cheese. I got so many rolls! 12 regular oopsies and then an 8x8 oopsie flat bread that I'm thinking will serve nicely as a pizza crust. THANKS CLEO....YOU ARE AN OOPSIE GODDESS!!!! ![]() ![]() ![]() |

I just posted this in the main thread. . .and then I found this thread. So I'm reposting as this makes more sinse in here:
-------------------------------------------------------------------------------- The other night after dinner I was really wanting something sweet. I checked out what I had on hand and decided to make a cannolli-esque kind of dessert. Super yummy!! I took one of my thicker Oopsie rolls and carefully split it horizontally to make a top and a bottom roll. Then I took about 2 Tbls ricotta cheese, a small splash of vanilla Davinci's and mixed that well with a fork. Spread that on the bottom roll and add about 2 tsp of sweetened carob chips (or whatever "chips" you use) and add the top roll. MMMmmmmm. . . Can you say Chocolate Chip Cannolli Sammie. . .???? Sadly, though, (lol) I'm doing a M/E week starting today, so I won't be able to add this dessert back in for another week. But it SOOOOO hit the spot! Laters! Andrea =) |

So what looking at the "oopsie corn dog" recipe on a previous page...made me think, could you do the same thing with cheese....thinking stuffed oopsie bread sticks. Not really a great cook, so don't want to try it if won't work....thoughts?
