Waffle disaster. I made a great batch of nice fluffy oopsie rolls for a french dip this week. Well, while my perfect batch was cooking, I decided to make some waffles. First I forgot the protein powder, but did add some butter flavoring. I pulled out the waffle iron, only to discover is was a Belgian waffle iron. Oh well, I thought. I am not sure if it was the lack of protein or the Belgian waffler, but these things came out flatter than crepes. My nephews were over and thought it was so funny. So, to recover from this disaster, I threw some oil in a pan, broke them up and came up with oopsie fried chips. I sprinkled them with Splenda and they were great. I tried to get a picture, but my young nephews ate them in record time.... There is not any left for me to munch on tomorrow. I will try the waffles at a later time, but will also make more chips....

Oh thats really too bad..the protein powder is what gives this batter the extra oomph it needs for waffles and they are very tasty! My waffle maker is just for two regular sized waffles so maybe that does have something to do with it.. they really are worth the effort.

Another useful oopsie!

Muffins! I just made oopsie muffins. Cinnamon ones, but it got me to thinking... blueberry... banana nut... etc..

Just take your oopsie batter and add whatever muffin ingredients you love to the yolks and mix as normal. Pour into a sprayed well (even for nonstick pans!) muffin tin and bake until done. Mine are still in the oven after 12 mins, so we will see how long it takes....

Wow, oopsie muffins... With extracts and syrups the variations are endless and induction friendly.

what about motzarella (sp) sticks, take a motza chees stick and cover with oopsie batter just like the corndogs and bake...hmmmm. with a little lc spag. sauce...yum

Chocolate Oopsie Roll Cake (Awesome)

Oopsie Chocolate Batter:
6 eggs
1/2 tsp cream of tartar
1/2 cup Unsweetened cocoa powder
1 tsp Vanilla Extract
1 tsp Coffee liquer

Filling:
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1 tsp vanilla extract
1 Splenda Quick Pack (or 1 cup granular, your choice)
1 cup Ricotta part-skim (I whipped it first)
2 (1/2-ounce) bars unsweetened baking chocolate
1 tbsp Davinci Hazelnut sugar free syrup

Preheat oven to 300F. Place wax paper on at jelly-roll pan and spray with cooking spray.

For batter: Separate eggs. Whip egg whites with cream of tartar. In another bowl, beat egg yolk with Splenda, extracts, cream cheese, cocoa. Incorporate both.

Bake for 30 minutes. Remove and let cool for 20 minutes. Roll on a teatowel sprinkled with cocoa and Powdered Eyrthritol. Let rest while making filling.

For filling. Melt chocolate in microwave. Whip the ricotta cheese in a small bowl; set aside. Add the chocolate to the softened cream cheese and mix well. Add the Davinci Hazelnut syrup, vanilla extract and Splenda. Add the whipped Ricotta. Blend well.

Unroll cake and spread filling. Re-roll cake...

You guys are so kind to me. I am just a dork. I like to eat pizza and cheesecake.

Would you believe that bottom crust is made from oopsie? Not an entire oopsie either. I need to rework the recipe, but it is an awesome, smaller, very dense cheesecake. It fed four of us!
