After experimenting with Oopsies and seeing how great they were to make cheese muffins, I decided to try to make a full-sized Oopsie pizza last evening and the results were amazing! My photos aren't the greatest in quality but hopefully you get the idea.

Oopsies make a GREAT pizza crust! I used the original recipe as per Cleo's instructions. The only think I did differently was that I added some Italian seasoning to the egg yolk mixture just before folding it into the egg whites. Once folding the yolk into the whites, I spread the mixture into well-greased (I used butter) full-sized pizza pan (I used an aluminum one), slightly patting the mixture down with a spatula just to ensure even coverage of the pan. My apologies, I didn't think to take a picture of it before I put it in the oven. Stuck the "crust" into a preheated 300 degree oven and baked it for 20 minutes. After removing the crust from the oven I stuck it in the fridge for approx 7 - 10 minutes to let it cool down before I added the tomato sauce. In hindsight I suppose you really don't have to cool it in the fridge. The crust really does hold up very well.

After adding the tomato sauce and cheeses and all the other toppings I stuck the pizza back into the oven and increased the oven temperature to approx. 400 degrees and baked it for another 30 minutes or until the cheese started bubbling.

The crust was extremely pliable and as you can see from the photo I had no problem at all eating it with my bare hands. It wasn't greasy or messy in the least. It looks and feels just like real pizza crust even on the bottom. It was just like eating "real" pizza, honestly. It was very, very, VERY good. I ate two huge slices...lol. My mother, who isn't low carb at all, happened to be around and I gave her a slice and she thought it was delicious too. I have a nice sized slice in my lunch bag at work today and can't wait until lunch time.

sweet fancy moses!!!! that looks INSANELY good!!!

Yummy's girl, thanks for the tip. I have been eating them, as they have good flavor. I just wanted something that I could make a sandwich out of. I will try toasting them, next time, if it doesn't work out, for me. Although, that pizza sure looks good! Ha!

Tecno-- I've tried bikergoddess pizza and it just kills me. As you said-- it's too many carbs and too much cheese. It caused cravings and it was terrible for me.

Regarding, H2O Goddess', I wonder if smattering the bottom of the pan with a very light dusting of flax seed meal would also facilitate/encourage the kind of texture one might find by doing the same (on a high-carb pizza) with corn meal. I might try it to see what happens. Right now I'm just thinking out loud.

Hey Cleo, bikergoddess? Is that Linda Sue? I'm missing something here...lol. I can't do flax right now as it makes me stall but I am DEF planning on adding it back in once I am in maint. Please let me know how your experiment turns out! I cannot wait to give this pizza a try. Barely any carbs! YEAY!

BTW - I am addicted to your motz sticks, yummy! I know I already said thanks but I'm sayin' it again cause I love those things!!

Tecnokitty-- my friend bikergoddess had a pizza recipe that was a huge sensation on the internet for awhile. I tried it-- ate the whole danged thing in one night. I can't do those crusts for some reason.

I am so glad you like the sticks! I love the motz sticks, too! So much, I only make them occasionally (and then only one or two)...

Hey all!

So I've been lurking and decided to try some of these recipes. I made the rolls, the pig in the blankets and the cake but I used orange jello.
The pig in the blankets turned out great and the rolls with davinci syrup and home made whipped cream was amazing. The cake is in the oven now and I will post when I taste and let you know. Thanks for the recipes and ideas!

I'm going to try the pizza next!

I'm trying to figure out how to put the pics up...
