I've tried various versions of this. They are fantastic baked and microwaved! Also you can sub cream cheese for the butter and OMG! I've also mixed pumpkin in and that was good too. I did try making a savory version with oregano and spices and didn't care for it at all. So, I'll probably only make the sweeter versions of this.

i like mine a little less eggy in texture. with this combo, it comes out very "bread-like".
1 egg 3T golden flax 3T oat fiber 1 1/2 T sour cream 2 packets Truvia (or 2T davinci/torani) 2T HWC (omit this if you use the liquid splenda) 1/8 tsp salt 1/2 tsp baking powder optional...SF choc chips or chopped nuts micrwave as usual. ENJOY! |

Used golden flax and oat flour. Beat the egg before adding to dry ingredients along with 1/2 tsp of vanilla extract. Placed in two round, ungreased, ramikins (sic?) and nuked for 1 min. 10 sec. Fun to watch them pop up. Tasted great...not at all eggy (think beating the egg first helps with that). Color was golden and looked like something from my oven/pastry shop. Texture was moist and muffin-y. I cut the muffin in half, spread cream cheese and 1/4 t of sugar-free blueberry jam on and bit into it. Awesome! Could only eat one though...felt good and full after the first one - you gotta love flax. (So, I too am wondering about storage options for the likelihood of my wanting to bake a batch for easy grabs on workday mornings.) I'll probably work with adding nutmeg and/or cinnamon on the next batch as well as future adaptations to include blueberries, pumpkin, etc. Thanks, again! yup i gotcha - i'm just wondering bc she wrote 'whole brown flaxseed' that maybe it wasnt ground yet and that was the problem. in that case i could totally see why the recipe turned out gross

I just made a vegan version of the minute muffin - I am not a vegan but have a little project I am working on .. and I was pleasantly surprised to see that it not only works out ok (it was delish) but that I am getting a much lower calorie product - about 250 calories, 1.7 net carbs ..
It is still a little too wet and dense, but delicious. I'll post it when I get the wet ingredients better figured out ... |

Sorry for the confusion. I did mean flaxmeal. I just meant the brown vs. the golden. I hear the golden is much better. Just gotta find it locally or order over the net.
