Congrats LuckiAngel! Well done!
I made another double batch today and just used the whole 8ozs of cream cheese so I wouldn't have all these tiny 2 oz packages in my fridge. I also added a tablespoon of flax seed and couple shakes of garlic powder. Wow, did they smell fantastic! (it made 15 large rolls) So hopefully with that many they will last abit longer then one day! I am loving these. My second batch this week in the oven tonight.
Question: What would be so bad eating almost all of them in 1 day? It's just 3 eggs (most people eat that at breakfast) And 3 oz. cream cheese (3 oz cheese allowed w/Atkins) First time I made them I ended up with 7... tonight I ended up with 9... I don't eat them all but what would be wrong if I did? It's only 3 and 3? |

Ha, I use so many recipes with eggs and cream cheese that I just imagined how many oopsie roll are in my Cauliflower and cheese casserole. . . A whole batch of oopsies, Wow, no wonder that dish tastes so good!

Got a batch in the oven. I added black pepper, onion salt (instead of regular salt) and a clove of minced garlic to the rolls. Man, they smell so good! I can't wait for my BLT today.

Holy crap! I made cream puffs from the oopsie rolls (thanks for the idea Cleo) and they were fantastic! I used two packets of splenda and put a little vanilla in the yolks. I was able to make two regular Oopsie rolls and 12 mini cream puff rolls. I also made the sugar free cook and serve chocolate pudding (with calorie countdown milk) and I don't think I can ever go back to instant pudding. I ate two while the pudding was still warm and I was in low carb heaven!

Thanks, Dreamchaser, maybe that's where I read it, or heard about it. I knew I'd heard something. I am using a couple T. of almonds in the oopsies right now, maybe I will switch to flax. Seems like I've forgotten alot of things I used to know.

I just made a batch of these for the first time, it was very easy. I added some garlic powder and italian seasoning and they smell great. I used my muffin top pan so it made 12 3 inch rolls. I took them out when the looked brown on top but I didnt think they were done so put them in for a few more minutes. I hope these turn out,they seem to be sticking to the pan really bad, I tried to take one out of the pan and it was sticking but also didnt seem quite done so maybe after a few more minutes in the oven they will be easier to get off?? how do you store these?? thanks

I leave mine in a sealed plastic container for two days and that makes the texture perfect--soft and chewy. I don't even need to think about bread any more. |

Thank you so much, Mazzie! I need to put mine into the refrigerator. I forgot and then had to toss mine away yesterday!
I don't think about bread anymore, either, now that you mention it! Thanks for giving me something new to be thankful for today! Brenda-- I don't use the muffin pans for the same reason-- they are an effort to clean! As for the storage, I keep them in a baggie in the fridge after the first day (with the seal open to let air come in). Then when you want one, just take it out and let it rest for 15-30 minutes. These can also be frozen. Zip the bag totally closed in the freezer. When you take them out, let them rest until they are at room temperature in the open air. Then you can store them in a bag again.
