Sooo, we went to Red Robin today and I'm quite sure that was the most delicious Guacamole Bacon Cheezburger I have EVER eaten.
The waiter looked at me funny when he took our dishes, because he previously saw me eating the burger with my hands, but then saw the untouched Red Robin bun on my plate . lol Tomorrow I'm going to do the hot dog thing and put 1/2 the oopsie on the cookie sheet, put 1/2 a hot dog wrapped in cheez on top of that, and then the other 1/2 of the oopsie to cover it like a blankie. I'm quite sure it'll be a nummy SuperBowl treat.

I agree. The flaxmeal is more of a flour consistency. However, I do think the almond meal is better as a cheesecake crust. Oh great...now I want cheesecake!

I just made my first attempt at making the oopsie rolls! OMG! They came out perfect the first time!!!!! We made the cream puff and it tastes just like an eclair!!! I am in heaven!! I can't wait to try them with other things. Cleo you are a GODDESS!!!!!! Thank you!

I've never used flax meal before -not sure how I missed that it was allowed on induction!

lindaokc - From the research that I have done, Flaxseed is supposed to help the thyroid and be a great source for your essential fatty acids. I'm just curious where you heard the contrary?
Frisco - I think the flaxseed added to the taste of the oopsie rolls. I only used a tablespoon but I really liked it. I used golden flax after reading that a lot of people prefer this to the regular flax. It has a lighter color and more subtle flavor. My next batch I'm using two tablespoons. I love experimenting with the rolls. There are so many great ideas that you all have contributed!

Induction oopsie
I have been on a very strict induction since Jan.2nd. I have lost 10 lbs, which was all in the first 2 weeks) and have been stalled since. Not really a problem, I am still in ketosis, or was until last night. I hope I didn't mess up too bad.
![]() Last night I was getting stuff out of the freezer for today's BIG GAME and I saw a lonley Carb Smart Fudge Bar in the freezer. I didn't really want it, it was just there, all alone in the box. Just that one. I don't know why but I ate it. I felt really bad after I ate it but couldn't do anythig about it. I was feeling pretty low so I went to the kitchen and got my comfort food out and ate it too..... A BIG OOPSIE w/ BUTTER, SPLENDA & CINNAMON. Yummy Dessert Fix: Think Cannolli
The other night after dinner I was really wanting something sweet. I checked out what I had on hand and decided to make a cannolli-esque kind of dessert. Super yummy!!
I took one of my thicker Oopsie rolls and carefully split it horizontally to make a top and a bottom roll. Then I took about 2 Tbls ricotta cheese, a small splash of vanilla Davinci's and mixed that well with a fork. Spread that on the bottom roll and add about 2 tsp of sweetened carob chips (or whatever "chips" you use) and add the top roll. MMMmmmmm. . . Can you say Chocolate Chip Cannolli Sammie. . .???? Sadly, though, (lol) I'm doing a M/E week starting today, so I won't be able to add this dessert back in for another week. But it SOOOOO hit the spot! ![]() Laters! Andrea =) |

Just had a delicious grilled cheese oopsie sandwich.... buttered 2 oopsies, used mozz. cheese and put roasted red peppers in between the cheese layers...busted out the sandwich maker and it was perfection! Thanks Cleo...never thought I would have a grilled chese sandwich again!

Today is my birthday!!! I made myself an OOPSIE Pizza! It was sooooo good! I followed someone else's recipe for using 6 eggs but I did add Designer whey to the batch (half scoop, only). I made 8 oopsie buns and 1 substantial size square for a pizza. I added no sugar pasta sauce, mozzarella fresh oregano and turkey pepperoni (my favorite). Baked it at 350 for 5 minutes...turned on the broiler to crisp it up a little more....Very delicious!
This has been a fun, non-guilty eating birthday for me!!! hehe ![]() |
