I had oopsies with an Arby's sammich, and MAN was it good!

Advice: Don't buy their LARGE sammich. It made 3 sammiches! LOL

Cleo - I finally made some mistakes worth keeping, btw. I think I was undermixing the the yolks and cream cheese before, and the texture really did come out different.

I also tried with guar gum in the whites (just because I'm a play baby, as my DW says :P) and it completely changed the texture of the bun.... I'm just not sure if it was for the better.

~happy cricket~ I added 1/4 tsp of Xanthan Gum to the whites last week and was ok with the baked and cooled bun texture. I liked the way the yolk mixture folded into the whites better.

I made another double batch yesterday and added 1/4 tsp of Xanthan Gum to the yolk mixture instead. It made for a little thicker texture so they folded into the whites easier, but I think I like the original recipe texture and taste better.

I think Cleo's right, they are what they are...oopsie's!

I also made Christina's cream cheese danish idea yesterday. YUM! Thanks for the idea, Christina! DH went to work with two of them and called to say thanks!

Now..TY..but I didn't come up with the Original idea...Renee did. I just added chocolate to the Oopies and then added the cream cheese filling. So, I give credit to Renee..plus my idea for Chocolate..2 heads work better than one..

Question

I've been reading the thread but I have such a head cold nothing is sinking in



Could I ask a question so I could make some now.

I don't have Pam or parchment paper, could I just rub butter on the cookie sheet or foil?

And how much and could I use vinegar since I don't have cream of tarter?

Got some (more) of these in the oven. I think that I forgot to spray the pan. Oops.

I added vanilla, cinnamon, and SF chocolate chips to this batch. I can't wait!

I use the Eat Well Be Well SF chocolate chips. I had bought them from Netrition- before they quit selling them. I have a couple of bags of them in the freezer.

Warm-- if you don't have spray, you could also try Crisco, or wiping the pan with canola oil. I'm worried that butter might end up browning/sticking.

They are in the oven now, I am watching them. Not burning so far (crosses fingers) I must of had some big eggs because I got 7 on my pan. I took pictures.

I'll let you know.

Back to edit: I am using a WearEver Airbake Cookie sheet, I'll see if it makes a difference

They are out of the oven and cooling on the pan, I was able to move them around, they didn't burn or stick using the butter. I think the baking sheet I used helped a little too. It was a Christmas present.

I just ate one too! I think the butter gave it a nice taste!

WOW! And I looooove butter! I dab a little behind each ear in case I get hungry later.

Way to go on your batch coming out beautifully! I had some airbake pans, and they are pretty nice!

I can't remember who suggested this, but I added a tablespoon of golden flax meal to the oopsie rolls and they turned out great! I also ended up baking them for 40 minutes as they didn't seem quite done at 30. When I first took them out they seemed a little bit crumbly but once cooled I put them in a plastic container and the next day they were perfect. Soft but not sticky and the taste was awesome! I may try 2 tablespoons next time to see what effect that has on them.
