Cheris Creamy Southwest Taco Soup...
This was excellent as written with ground beef - but - if anyone has a chance please try the chicken version - this is outstanding!!!

This recipe is wonderful! One of my favorites!
CHERI'S CREAMY SOUTHWESTERN TACO SOUP 1 pound ground beef 2 3/4 ounces onion, chopped, 1/2 cup 2 cloves garlic, minced 1 tablespoon cumin 1 teaspoon chili powder 8 ounces cream cheese, softened 2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies) 2 cans beef broth 1/2 cup heavy cream 2 teaspoons salt, or to taste In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through. Makes 8 cups or 6-8 servings Freezing not recommended Per 1/6 Recipe: 361 Calories; 29g Fat; 18g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs Per 1/8 Recipe: 271 Calories; 22g Fat; 13g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs I've made it with chicken as well. The chicken is good, too, but I prefer the beef version

I LOVED this! I garnished with a small dollop of sour cream and a bit of shredded Cheddar. Seriously delicious!

This is a favorite of mine, too. For some reason, I think the beef version tastes better with chicken broth instead of beef.

I used half chicken and half beef broth because that is what I had. It turned out great. This is just an outstanding soup. I put it on my flylady site and those who tried it, loved it!

Fancy it up with little baby meatballs or shrimp. Sour cream on top with chopped chives or bacon bits sprinkled on top. Our favoirte soup, hands down.

Just made this tonight. Told my son and his wife to come over tomorrow and have some...now I don't want to share!

I'm making this again tomorrow. We absolutely love it. This time I am thinking about taking some of those low carb tortillas, cutting them into strips and frying them up to serve with it. They are only 5 carbs each and won't add that much carb to dinner. I have the tomato and basil flavor.

I don't know of anyone that doesn't like this recipe. Maybe your tastebuds are off Charski.
