Rebecca's Flourless Blonde Brownies

OMG...

I thought my Flourless Brownies were grand until I thought to try them blonde.

WOW!!! They have quickly become our most favorite LC dessert, ever!

One of the only things that I have missed since LCing (other than brownies) is rich, moist, buttery, cinnamon 'sugar' cookie bars.

Well, these are it for me.
Amazing warm, terrific cold...

Here's the recipe for Rebecca's Flourless Blonde Brownies:


1 C (2 sticks) butter, melted
1 C Splenda
1 T Vanilla
2 C Almond Meal
1 T cinnamon
4 Eggs, beaten

Melt butter in large microwaveable bowl
Add Splenda and vanilla to melted butter, cool slightly
Add almond meal, cinnamon and eggs, mix thoroughly
Pour into buttered 8" square glass baking pan
Bake @ 325 for 40 minutes
Once thoroughly cooled, refrigerate
Cut into 16 squares and serve.

For 1 of 16 squares: 216 cals/ 19.8 fat/ 4.1 carb/ (1.5 fiber)/ 5.3 protein

ENJOY!!!

Rebecca - sounds great! How much cocoa do you add when you make your brownies? I think I may leave out the cinnamon in the blondies and add choc. chips. I seem to be stuck on chocolate chips today if you notice my other posts!

Wow, these brownie/blondie threads sound so awesome that I've subscribed to both of them and put almond meal on my Netrition order for next week. Brownies are my absolute favorite dessert of all, and I haven't had but a couple since being diagnosed T2 two years ago--and this recipe sounds like it'll be so easy to indulge without the repercussions!

Anyway, just wanted to chime in and say 'hi' and thanks--can't wait to try them both!

Just for clarification- that is one TABLESPOON of vanilla and cinnamon and not 1 teaspoon, correct?

I added 2T cinnamon this time.

I made these today and they are totally awesome!They turned out perfect the first time,for me that is amazing.
DH liked them too. He does not do this woe ,he tries out some of the things I fix.He was really amazed and said this was a keeper.

I tried these for my dad who loves snickerdoodles and he gave 'em rave reviews! He didn't even know they were sf. Tweaked 'em with erythritol and stevia. Delicious! That's high praise from a cookie lover who's addicted to transfat and HFCS. These are so incredibly easy to whip up with no fancy ingredients. Maybe I can even teach him to make it when I'm gone. That might be wishful thinking, though...

Rebecca, I have these in the oven right now. I added some chopped wal-nuts and cut up some sugar free Chocolate bars and added them in. OMG, the batter tasted so good.

I'll surprise hubby with these when he gets home.

I'll let you know how they turn out.

It makes me so happy that you're all enjoying these.

These are the best, our very favorite, of all the LC treats I've ever made.
(And I've made tons of recipes over the past year and a half).

I'm really glad others are finding these blondies super yummy, too!

I plan to make a batch every single week.

I was just telling someone in another post that I know why I am fatter than everyone. I have entirely different taste buds then the rest of the world. People love certain LC foods that just don't taste that great to me. Oh how I wish they did. May 2, 2003 began with Atkins and lost 40 pounds. Changed to Paleo /Atkins and lost 75 more.
August 2005, switched to Rosedale and lost 13 more.
Timelines:
Lost #100 pounds in 16 months (9-8-04)
Lost an additional 28 pounds but have trouble keeping those off and losing more.
128 pound weight loss! (didn't hold it)
Back to a [COLOR="Red"]120 [/COLOR]pound loss!

They had a nice flavor...too much cinnamon but yes I was invisioning a true blonde brownie lol I gotta retrain my taste buds too!

LOL - you guys are too funny!!!!

I've had folks rave about recipes too and I thought

I guess I've been doing this for so long - I can now tell which recipes I will like and which I won't bother with. I really like almond flour so it works for me.

The trick is keep trying and you will find a recipe or two that will work for you. I always tweak from the start and next time will add some brown diabetasweet to give it more "brown sugar" taste.

Yes your taste buds do change LOL -

I agree= I tried these and they turned out really dry. I think my taste buds are the same, or I expect too much. I have thrown away a fortune in low carb goodies.
I am also happy that others have found these so great.
Sungoddess The best low carb dessert I have tried is Chocolate Mayo Pound Cake. Have you tried that one.

Threadjack alert--

We are long lost sisters and share the same taste buds. I do agree that the chocolate mayo cake is the bomb!! I even took the basic recipe and made it into a spice cake . I wanted something gingerbread-like but based on the chocolate mayo recipe. I didn't get gingerbread, but a nice spice cake. It is the best LC dessert I have had. Think I will stick to it.
Oh and one more treat I think is heaven is 1-2-3 Scott's orgasm brownies. OMG But they make my tummy sick so I can't eat them.

Well I started in 2002 and have been a pretty steady low carber most of those years, so I am not sure my buds are going to change. I should give up the sugarfree treats any way. I am far from goal and they just get in the way of me reaching it.

Hi Gang!

Since DH really wants these blondies in the house at all times, I have another batch in the oven.

This time I've used 1 C Smart Balance Light (which I normally use only as a spread).
I have no idea how they'll come out, but I do love the taste of SBL.

I'm always up for cutting calories as long as taste & texture are uncompromised.

Anyway, I won't be trying them until after my dinner, when they're cold.
I will post my thoughts on them for those who might be interested.

Have you tried baking with erythritol? It makes every low carb dessert taste 100% better IMO. You get more of a "sugary" texture and rounded flavor. It's miraculous stuff.
