Banana Cheesecake Muffins
Banana Cheesecake Muffins
2 8 oz. packages of full fat cream cheese - room temperature 1/4 cup granular splenda 1/4 cup Banana Davinci's 1 egg - room temperature 1 tbsp Carbquik (optional) 1 tsp lemon juice 1/2 tsp ground ginger 1 tsp vanilla extract Add all ingredients into a large bowl except the egg. Mix until smooth and well incorporated. Add egg and whisk into batter completely - do not over mix. Pour into a 12 muffin pan lined with cupcake papers (spray with Pam) or use Silicon liners (do not spray). Bake 350 for 20 minutes. Remove from pan place on paper towels, cover and refrigerate overnight. I make cheesecake muffins all the time, plain, raspberry, cherry, dulce le leche - this was the first time I made Banana and it was so yummy I decided to post what I did. I know I often look for variations of my favorite recipes. Enjoy!

I came so close to buying the silicone cupcake pan at Walmart this morning! These sound delicious!
