Who wants to attempt to make this a LC dessert?

Hi all you wonderful LC baking experts Time for another dessert recipe to make LC. My husband loves for me to make this for him and I want to enjoy it too. Here is the orginial recipe:

Cream Cheese Pound Cake (Never-fail)

Ingredients:

1 8 oz cream cheese

3 sticks margarine

3 cups sugar

3 cups all-purpose or cake flour

Pinch salt

6 eggs

2 teaspoons vanilla

Directions:

Have cream cheese and margarine at room temperature. Cream together. Add sugar gradually, beating well. Add eggs one at a time, beating after each egg. Sift and gradually add flour slowly. Add salt and 2 teaspoons vanilla. Bake in a tube pan at 325 degrees for 1 1/2 hours. Remember-beat this cake to death!! It cannot hurt it :}


I think I can sub the regular flour for Kevin's baking mix and either use granular splenda or maybe splenda quick packs or liquid splenda for the sugar. Wonder if that will work or do any of you have any ideas?

I have a similar recipe that uses blanched almond flour which always comes out well!

Ditch the margarine and use BUTTER. Margarine is nasty stuff!

And I'd use Splenda quickpacks in combo with some erythritol or Diabetisweet or something that will add some of the bulk that will be missing from taking sugar out of the equation.

Sounds good, I might have to try it myself!

Its really good HC recipe. LOL I always use butter anyway just had not changed that in the recipe.

Would like for you to post your Almond Flour one when you get time.

Here's a Carbquik version posted by Chef Greg:

Carbquik Pound Cake

Servings: 16

Total Preparation Time: 60 minutes

3 1/2 cups Carbquik
1 1/2 cups Splenda
3/4 cup butter, softened
1 teaspoon vanilla
1/8 teaspoon salt
6 whole eggs
8 ounces cream cheese, softened
Pound Cake

-Heat oven to 350°F.
-Grease angel food cake pan (tube pan, 10x4 inches or 12-cup bundt cake pan) and dust with Carbquik.
-Beat all ingredients in large bowl on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into pan.
-Bake 55 to 60 minutes or until toothpick inserted near center comes out clean.
-Cool 5 minutes; turn pan upside down onto wire rack or heatproof serving plate.
-Remove pan; cool cake completely.

Ah, I think this is the one I was looking for!

Almond-Flour Pound Cake

1 C butter
1 C Splenda
5 eggs
2 C almond flour
1 t baking powder
1 t lemon extract
1 t vanilla extract

Cream butter and Splenda well. Add eggs one at a time, beating after each. Mix flour with baking powder and add to egg mixture a little at a time while beating. Add lemon and vanilla extracts. Pour into greased 9" cake pan and bake at 350 for 50-55 minutes.

Christina I make that exact Cream Cheese Pound Cake, with butter of course. I got the recipe years ago from in a Southern Living cookbook. It is my family's favorite, especially with strawberries and hot fidge sauce, YUM.

I would sub Kevin's cake and cookie flour mix for the flour and a mix of erythritol, diabetisweet and splenda quick pack for the sugar and bake as you would normally.

Okay, so to substitute the 3-sweetener combo, what amounts would you use to equal the 3 cups of sugar?

HI!
I want to try to do this tomorrow..this is what I am going to do. Kevin or anyone else that can think on my recipe let us know what combo to use for sweeteners. I think I will use 1 splenda quick pack (equal to 1 cup) 1/2 erythritol, and 1 1/2 cups of diabetisweet along with Kevin's LC Bake mix. What do you all think that would work?

Ok everyone here it is!!

Hi!
I am going to post this again. Seems like the first time didn't work. I made my LC Cream Cheese Pound cake using Kevin's LC baking mix, using 1/2 erythritol, 1 1/2 diabetisweet Sugar and 1 splenda quick pack for the 3 cups of sugar and using Butter instead of margarine. Guess what!! I was a wonderful success!! I think its even better than my HC version!! Everyone please try this when you have time. Here are my pictures I took of it. This was done with a Samsung phone camera and they are not the best but they are to the point. Thanks Kevin!! You are my LC hero!!

I am bumping my old thread because I am making this today along with Lauren's New one to try the taste difference in it..someone add up the carbs in the recipe I made 1 1/2 years ago please...mine will make 24 servings..its a BIG cake..lol
