Food chopper question
I'd like to make the faux rice/potatoes from cauliflower but I don't have a food processor. I have an incredibly tiny kitchen and don't have room for one anyway. I was thinking about buying one of those small, cheap electric food choppers that black and decker puts out. You know, the kind that looks like a big food processor, only it's really small? Will that work to make the faux rice? Or am I just setting myself up for frustration?

Hi.....I have one of those, and I sure love mine. It's what I go to, for quick "chopping-jobs" of any number of things in my kitchen. If I need more quantity, I do an extra batch or two. You'll just do a couple--or several--pulses until you see the consistency that you want. It's a snap to clean, and stores in a drawer. I would hate to give mine up...even tho I do have a bigger--albeit, less used--processor.

Faithgirl--you can "grate" raw cauliflower on a cheese grater too. I did this for one of LindaSue's recipes and it is really easy...

I have 2 different FPs, but when I make faux fried rice - I use this:
Kwik-Kut chopper - number TE 70 I *love* my Kwik-kut!. It's hand held and less then $7.00 *Ü* |

Have you tried this chopper for nuts. When I use my food processor for nuts I get some chopped nuts and some paste. No matter how hard I try the FP just doesn't do right for me. Dixie in AL

Hi Dixie ~ I have another Kwik-Kut that is not scalloped, but rather has the flat edge. My Mom gave that to me years ago, and yes, she used it for chopping nuts. I use a chef's knife.
That's the reason I like doing some of these chopping chores by hand - I am much better able to control when to stop chopping. I understand what you're saying about the FP and ending up with something that's been chopped too finely. I don't use my Kwik-Kut for many jobs, but those that I do use it for - I wouldn't want it any other way. *Ü* p.s. Just a little note about this company (Kwik-Kut). When I ordered that little chopper a few years ago, I called the company, ordered the chopper and a bill was enclosed - no prepayment! She told me to simply add in the cost of the postage as it appeared on the metered postage strip and send in the total amount. I didn't know anybody did business like that anymore - brought a big ole smile to my face!

This is how we prefer to do it too because then you can see what the pieces look like and can stop when you get to the size you want. Very handy indeed!

You really want to purchase from businesses which treat you fairly and go out-of-their-way to give you that little bit of extra service. It is sad that those types of businesses are few and far between. It is important that we as consumers let others know of good service when we receive it. I would rather pay more for something and get good service than pay less at a business where they could care less if you were there and show it by their attitude. In fact, I have been going to Walmart less and going to local Mom & Pop businesses. They treat you like family. Oh my, I was on a soap box; just like my Mom! I swore I would never do that!
