Braised Soy Sauce Chicken
This chicken is *really* moist and easy to make.
1 whole chicken (about 3 lbs.) 3 tbsp peanut oil 5 tbsp soy sauce 2 tbsp Splenda 1 small onion, chopped 3 cloves garlic, crushed 1 tsp red pepper flakes (or one red chilli chopped) 1/3 cup water Wash the chicken inside and out and pat dry with paper towel. In a large wok or very deep frying pan, gently heat the oil. Add soy sauce and Splenda. Stir until Splenda dissolves. Add the whole chicken, turning on all sides to coat. Add the chopped onion, garlic, pepper and water. Cover. Turn the chicken occasionally so that it cooks evenly. When cooked the juices will run clear when chicken is pierced. It takes about an hour. Remove chicken and bring sauce to a boil to reduce. This recipe is about 15g of carbs (in the sauce) for the entire recipe, but you can control the amount of sauce you eat since it's served separately.
