Arlene that is true, but there is nothing like a yellow onion sauteed in butter. lol. I'm a fanatic and usually get a good portion of my carbs this way. In one form or another throughout the day.

Sorry, I meant that I make it in a casserole pan, Beat the eggs and mix the beaten eggs and cooked sausage together w/ a handfull of cheese and bake till set. I use a 8x8 square pan so it is thick so it takes about 25 min. the longer the pan the shorther the cooking time.

You take hard boiled eggs and press 1/4 of each pack to an egg. You keep pressing up around it until you seal the whole egg up into a sausage ball. Its quite good. I love doing this with JD sausage though cause I am a sausage snob!

OK that's a keeper recipe. Easy and tasty! DS gave it 2 thumbs up. (He is my breakfast eater with me, DH does not really like "breakfast" food) I only made 4 of them to see how they went over. DH and I split one, DS had one and wants the others to take to work with him this afternoon! Cool.

What do you think?
We were at a party last Sat, and they had some spicy sausage and Velveeta cheese on rye mini breads, I wonder If I could do that in a mini muffin pan and get good results. Velveeta has 2.7 carbs per ounce. I may try that today. |

Proceesed cheese product. But Cheese is dairy and it all has carbs. Some has more than others. I am usually able to use it as almost a 'free' food, But if I get too complacent I can go overboard.

Cheese counts as 1 carb per slice doesn't it? And I always wondered about Velveeta and induction because of the Whey protein in the Velveeta.
Molly, couldn't you use a regular cheese in place of the Velveeta? Oh, but the Rye bread isn't Induction friendly either LOL. |

I dunno. The Velveeta is so creamy, and i need enough to be a binder. I could try 1/3 American, 1/3 co jack or mozzarella, but not cheddar or anything cause its too greasy.

Just realized that my post on the Grilled Zucchini thread works here too.....
I do grilled bacon zucchini on my Foreman grill.... Take a med. zucchini and slice it long ways, down the length.... Take 2 slices of thick-cut bacon and lay them on the grill, slightly overlapping....Place the zucchini slice on top of the bacon and top with 2 more slices of bacon....Basically, making a "sandwich", with the zucchini between the bacon... Close the grill & cook til the bacon is crisp...the zucchini will be just tender... The saltiness of the bacon seasons the zucchini enough that you don't really need additional seasoning.....You need thicker cut bacon so it doesn't overcook before the zucchini is tender.... VERY quick & easy and VERY yum.... |
