This is one of my sister's favorites at the moment. A great side dish!
Roasted Cauliflower with Sea Salt 3 cups cauliflower florets 2 Tbsp. olive oil 1 tsp. flaked sea salt coarsely ground black pepper to taste (optional) Preheat oven to 425 degrees F. Toss cauliflower florets with olive oil and sea salt. Spread cauliflower in an even layer on a cookie sheet. Roast 10 minutes. Turn cauliflower over. Roast another 10-15 minutes, or until cauliflower is just browned and fork tender. Season with more salt and black pepper if desired. Serves 6. Per serving: 52 calories, 5 g fat (1 g saturated), 0 mg cholesterol, 3 g carbohydrate, 1 g fiber, 1 g protein, 0% Vitamin A, 39% Vitamin C, 1% calcium, 1% iron

Gluten and Dairy Free Induction Pancakes
5 Eggs, beaten 200mls Cococnut Cream 1/4 Cup Coconut, ground to a flour 1/2 Cup Xylitol, ground to a flour and mixed with coconut flour Vanilla Essence Pinch Baking Soda Xylitol and stevia to taste 1. Beat all ingredients together 2. Cook in heated pan, I find they need little oil because of the fats in the recipe itself. 3. Eat with your choice of sugarfree syrup, xylitol and lemon juice. Great with whipped coconut cream and berries after induction. You can make crepes with these or fatter pancakes and pikelets too. My brother and his mates ate these, and I only told them after that they were much better than the sugar laden crap they normally make. They were really impressed. This made enough for four people to be very very very full!

I think I will try this and use fresh mushrooms. Has anyone tried this using homemade LC alfredo sauce? I have seen some recipes for this around. Will have to go looking.

This is an old, old family recipe that we always have at any family gathering. It may sound a little strange, but trust me, this is delicious. Wilted Lettuce Dozen eggs 1 lb. of bacon 1 head of lettuce 1 dollop of mayo Hardboil the eggs and dice them up. Chop up the bacon and fry it. Drain all of the grease. It's best for this recipe to use paper towels to soak some of it up as well. Chop up a head of lettuce and mix all of the ingredients together. I would guess the mayo is about half a cup. Just add some, mix, and taste. You just want to give the lettuce a light coating. You'll know when it's right. This is a great snack fresh or cold. ftfh28, my family loves you! I could not figure out where I had found this recipe, and I've made it (and variations) probably 6 times in the past few weeks. My entire family loves this stuff. No more wasted lettuce here. I've added a small tomato, chopped, and it is just like a BLT. I've also made it with avocado added. You pretty much can't go wrong here. This is really so much better than you'd think. Honestly. By my book, the whole recipe comes out to about 19 carbs. If someone can plug it into their program, we can come out with a better estimate.

Thanks so much, Soobee. I'd estimated it best I could and didn't come up to that amount. Not realizing this, I'd have been defeated before even beginning.
