Lately, my snacks or mini-meals have been of Tiger prawns
Not exactly friendly to my wallet, but oh so good anyhow!I've also been eating a lot of cold tuna burgers. I made a whole heap and froze them, meaning to thaw them out and reheat them with some veggies - but I discovered they're great just out of the fridge. I smear 'em with a bit of mayo or aoli, top 'em with some sliced cuke and just eat them like that. They'd be great between a couple of Oopsies! |

I made these last night and I tell ya, it was one of the best things I have cooked in a long time! I sauteed the onions in a pan with butter and also added 3 cloves of garlic. When I stirred that into the cream cheese I also stirred in hot sauce. It was very very good!

One of my favorite snacks: place several pepperoni slices on a plate. Top with small cube of mozz cheese. Nuke just until cheese is soft, but not melted. Great for when you need a little something to take the edge off!

This is an old, old family recipe that we always have at any family gathering. It may sound a little strange, but trust me, this is delicious.
Wilted Lettuce Dozen eggs 1 lb. of bacon 1 head of lettuce 1 dollop of mayo Hardboil the eggs and dice them up. Chop up the bacon and fry it. Drain all of the grease. It's best for this recipe to use paper towels to soak some of it up as well. Chop up a head of lettuce and mix all of the ingredients together. I would guess the mayo is about half a cup. Just add some, mix, and taste. You just want to give the lettuce a light coating. You'll know when it's right. This is a great snack fresh or cold. |

I made these tonight.. (home alone so I got creative) after I ate a can of kippered snacks.
Sucheese! (cheese sushi) They were really good and would make a satisfying snack or lunch : 1oz of grated cheddar 1/4 cup crab meat 2tbs cream cheese melt the cheese into a thin but solid circle in the micro (on a plate) or fry pan. Cook until really bubbly and almost browned at the edge. Cool. spread cheese with cream cheese top with crab meat roll and eat would be awesome with asparagus (pickled maybe?) or chives. cals:242 fat: 19g carbs: 2.3 protein: 15.4 |

I eat this at least once a week.
You will need: Boneless/skinless chicken breasts Garlic powder Onion powder Black pepper Cream cheese, I prefer the kind with chives but I’ve also used the garden spread Bacon Minced Garlic Parmesan cheese Butterfly cut the chicken then pepper and powder the insides well. Spread a nice amount of cream cheese on one side. Close it up and pepper and powder the top. Wrap with 1-2 pieces of bacon ( I find the thick sliced is best) around each breast. Sprinkle a little bit of minced garlic over the top, I like to drizzle some of the juice, too. Bake at 375 for 45-55 minutes. |

Grilled Lemon Chicken
Makes: 4 servings Prep: 20 minutes Marinate: 1 hour Grill: 12 minutes Ingredients • 4 skinless, boneless chicken breast halves (about 1 1/4 pounds total) • 1/2 cup Low sodium chicken broth (No Salt Added) • 1 tablespoon finely shredded lemon peel (zest) • 1/4 cup lemon juice • 1 tablespoon finely snipped fresh lemon thyme or thyme • 1/4 teaspoon ground black pepper • 2 lemons, halved • Fresh lemon thyme or thyme sprigs, optional Directions 1. Place the chicken in a resealable plastic bag in a shallow bowl. For marinade, in a small bowl stir together no salt chicken broth, lemon peel, lemon juice, 1 tablespoon thyme, and pepper. Pour over chicken. Seal bag. Marinate in the refrigerator for 1 to 2 hours, turning bag occasionally. Drain chicken, reserving marinade. 2. Grill chicken on the rack of an uncovered grill directly over medium coals for 12 to 15 minutes or until no longer pink (170 degrees F), turning and brushing with marinade halfway through grilling. Discard any remaining marinade. Add lemon halves to grill for the last 3 minutes of grilling
