Beef stew! I use turnips in place of potatoes, 1 small carrot, and cut green beans instead of peas. I thicken it with Not/Starch. Very delicious!
I learned that turnips won't be bitter if you drop them in boiling water for 4 to 5 minutes, and then immediately put them in ice water to stop them from continuing to cook. After that, you can use them in whatever recipe you like. |

I made a pot roast in the pressure cooker with rutabaga, parsnip, a couple carrots, pearl onions, and chayote squash. Boy it turned out yummy!
I also love any kind of chile - chile verde, chile adovado, chile Colorado, whatever! Topped with shredded cheese and chopped sweet onion...mmmmm. AND I love pot pie made with a Carbquik/cheese crust. Heck I love hot food. Any kind! |

Clam Chowder and Barbo's White Sauce Mix.
Low Carb Clam Chowder
Taterhead’s Recipe Note: add drained clams last, so they don't get rubbery.... 1/2 cup chopped onion 3 tbsp chopped garlic 2 celery sticks chopped 1 c. large shred carrots 1/2 a head cauliflower 2 cans chicken broth 1 8 oz. bottle clam juice 2 10 oz. cans clams 1 stick butter......yes a whole stick ;-) 2 cups heavy cream 6 crumbled pieces cooked bacon 1 tsp salt 1 tsp pepper 1 tsp thyme 1/2 tsp paprika 2 tsp. Xanthan gum In a big pot sauté onion in a little oil cook on med-hi until caramelized in color (must do this because it adds soooo much flavor). Then add in chicken broth, clam juices from canned clams plus 1 bottle of clam juice, all the veggies, crumbled bacon plus the bacon drippings and all spices except X gum.... simmer until veggies are soft. Add 1 stick butter, 2 cups heavy cream, heat a little, then sprinkle in 2 tsp. X gum, bring to a mild boil cook until slightly thicken, NOW! add the drained clams and cook for a couple of minutes. I got 6 Ziplocs bowls full. Debbie.... PS, I also mash it a little, thickens it a touch Also my very LC White Sauce Mix for the fridge: Barbo’s Instant Low Carb Sauce Mix TNT Instant Béchamel, Veloute, Beefy Mushroom 2 c. Carbalose plus 2 tbs. 1- 4oz. cube butter ¾ tbs. salt ¾ tbs. coarse pepper, freshly ground is best *Onion powder to taste Place everything in Cuisinart except onion powder and whirl until the mix is like coarse sand. 1 serving: 3 tbs. mix ½ c. liquid 4 serving: ¾ c. mix 2 c. liquid For white sauce or Béchamel sauce. (Add cheese for cauli. & cheese) 1. I used ½ c. Low Carb 2% Hood milk, pinch onion powder, 3 tbs. mix 2.I used ¼ c. heavy cream and ¼ c. water, pinch onion powder, 3 tbs. mix. I think I liked the milk best. Veloute Sauce: Serving size was the same as above I used: ½ c low sodium chicken broth Pinch of onion powder 3 tbs. mix Method: *Onion powder was a pinch as I made small servings as my experiment. It is optional but I thought it disguised the Carbalose taste. Method is make a slurry and cook on low for 3 minutes once it comes up to a boil turn heat down, keep stirring with a whisk. When using the large amount use hand held blender Beefy Mushroom Sauce Serving size was same as above Sauté fresh sliced mushrooms, set aside, add when sauce is ready ½ c. really good strong beef broth 3 tbs. mix.
