Revamped my Carne Guisada recipe:)

Carne Guisada Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds chuck roast -- trimmed and cubed 1 small onion -- diced 4 ounces canned chili peppers -- chopped green chilis 16 ounces beef broth 14 ounces canned tomatoes -- diced with juice 2 tablespoons olive oil 2 medium jalapeno peppers -- or to taste 2 tablespoons chili powder 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon ground cumin 1 each salt and pepper to taste Heat oil in a heavy pan and saute the beef until lightly browned all over. Add all the remaining ingredients and bring to a simmer. Cover and simmer over low heat for 2 hours or until beef is very tender. Remove lid and raise heat. Simmer until liquid thickens, about 10 minutes. - - - - - - - - - - - - - - - - - - - Per Serving: 410 Calories; 29g Fat (63.2% calories from fat); 29g Protein; 9g Carbohydrate; 2g Dietary Fiber; 87mg Cholesterol; 815mg Sodium. How do you serve yours, Dottie? I'm thinking that this would make a great "Burrito Bol" like they have at Chipotle. I'd probably pile it on some chopped lettuce and top with some cheese, sautéed peppers and onions and sour cream. Maybe some guacamole too. Am I missing anything?

I finally had a chance to try the recipe and it's delicious. I drained off most of the liquid, shredded the beef, added a little xanthan gum then added back about a cup of the juices so that the meat would be moist but not soupy. My husband had his on tortillas and I just put some on a plate and topped it with guacamole and sour cream. I didn't have any lettuce or peppers plus I figured there were plenty of veggies cooked with the meat. Here's my photo:
![]() I kept all of the seasonings the same but I used some canned poblano chiles instead of the regular green chiles. I also browned the onions along with the meat and added 1/4 teaspoon of liquid smoke. I couldn't taste the smoke so I'll just leave that out next time. Oh, I put in three big jalapeños but they must have been "duds" because it didn't come out hot at all. |
