Edamame Beans?
I just bought a bag at Trader Joe's and the nutritionals souind great
for low carbing. 1/2 c. serving = 8 gm car, minus 5 gram fiber which only leaves 3 gm carb and 10 gram protein. My DH thinks that they taste like green baby lima beans and I put 1/2 c. in my veggie beef soup. Why don't I see more recipes that include these beans, say a mixed veggie dish? Thanks, b |

A lot of people have thyroid problems or are soy sensitive so that could be one of the reasons. There is a veggies mix at TJ's I love called Organic Greesn with Envy-it has edamame, asparagus tips and broccoli. I have a sensitivity to soy but I have no problem with these and they are delicious.

I love Edamame beans, and I always keep a bag in my freezer. It's a great way to add veggies to any dish, just throw a handful of them into anything you're cooking... I love it in spaghetti type sauces and with casseroles of any kind: I put a handful or so per person in the pot when I know I'm near the end of the cooking time for the dish (5 minutes of the frozen stuff in the pan will do the trick)
They are also great to eat cold in salads; Chicken or tuna salad with edamame beans are yummy, and add a little extra pop/crunch to the dish! |

I didn't know that you could buy edamame in the store. The only place I have ever seen them is at the veggie bar at BD's Mongolian Barbecue. I got some for my stirfry one day and fell in love! I am going to go to Trader Joe's and see if I can find them there.
If that's what lima beans taste like, I owe my mom an apology!!! |

If I buy mine in the supermarket they are already out of their pods and frozen; at my oriental mini supermarket I can buy them fresh and in the pod... This reminds me, gotta go and get some more, as I ate the last handful this weekend!

Sassay - I went to their website out of curiousity (traderjoes.com) - none in Florida. Might make their way there eventually, though. Took them quite a while to head east from CA.
Had edamame first at a Japanese grill - Yum! Love to get them at Trader Joe's and keep them on hand - hadn't thought of using them in soups and such, though. Duh. ![]() |
