Jo,
I was out in your neck of the woods earlier this month. Visiting my sister in Fairfield. I really like California. My brother-in-law took us down to Monterrey Bay via Highway one, this was for my husband. I grew up in California but my DH is from Florida and spent most of his life here in Houston. When we come visit my sister I always try to include some tourist type trips around for my husband. A great place to live especially near the coast. |

Just read the entire post - LOVE this thing!!! I know most of you don't eat bananas, but I do, and make it with bananas and walnuts - YUM! Made an entire muffin tray this morning (12 muffins) and DH had some too - he likes them!
I can't wait to have a SANDWICH and make some pizza with this - things I didn't think of! Even the pancakes sound awesome!!! Question: IS ANYONE STALLING OR GAINING BY HAVING THIS DAILY? ANYONE? |

I think I posted this before but if you are craving Pizza this is the best IMHO. and it's our new Friday night Pizza. I make it with salami, sausage, and mushrooms, the crust is a great flax recipe. Throwing it in for you.
The crust: 1/4 c flaxmeal 1/4 tsp baking powder 1/4 tsp garlic salt 1/4 tsp onion salt 1 packet Splenda 1 tbs Italian seasoning 1 tbs grated parmesan 1 egg 2 tsp water Mix dry ingredients, then add egg and water. Spay a dinner plate with Pam and spread mixture into plate. (Will be about the size of a 'personal pizza') Microwave for about 1 minute 40 seconds. Slide off plate into a pam sprayed frying pan and brown both sides on high. Place crust on a cookie sheet lined with parchment paper. Spread pizza sauce over crust almost to edges. Top with cheese of your choice (I used a moz./jack blend) and toppings of your choice. Pepperoni and mushroom for me. Heat in oven at about 350 until cheese melts and toppings reach desired 'doneness'. Cut into 4ths and enjoy. It looks like pizza, tastes like pizza, you can pick it up and eat it like pizza, has that crunch like a thin crust pizza. I loved it....

Carrielyn, I do love California, but I do love Hawaii as much!!! I have family who just recently moved from Fairfield to Vacaville (huge move! - I should talk, we moved 2 blocks from our old house last year)
It's great to be a tourist - people who come to california usually have seen more of california than I have. I live about 1/2 hour away from San Francisco and have never been to Alcatraz! ![]() ![]() Cablegriz, the pizza crust looks great. Pizza has been a hot topic the past couple of days (dd wanted some last night, coworker went for pizza for lunch today) I see pizza in my future!

I got my sunflower seeds (roasted and salted - I was too lazy to find bulk bins of raw) hope it tastes ok.
Having another grilled cheese tomorrow - however, I will watch it more closely so that the cheese doesn't melt all out the sides and into the pan (although crispy cheese is a treat as well) Maybe I should go to bed now so that it won't feel so long till tomorrow morning! |

I tried the basic recipe for the 1 minute muffin. And I was a skeptic. But all I can say now is wow! even as I was mixing it up I thought, this looks horrible. But when it came out of the microwave, it looked more like a muffin. The taste was sort of bland I thought but I liked the texture. I made a strawberry shortcake with it (the muffin as the breading). It was delicious.

It is a great photo, I saw one very similar at a photographic exhibition in London this week. Wouldn't it be strange if it was the same one?

I tried adding caraway seeds and putting the muffin mix into a square pan, then nuked it.
then I made a sandwich with ham and swiss on 'rye' bread with mustard. OMG, good. |

ok, sunflower seeds are the best addition!!! It so totally makes the muffin/bread taste like the whole grain breads I used to buy that had sunflower seeds (not enough in my opinion) in them.
I added 2 T to my bread this morning and made my grilled cheese (watched carefully so that all the cheese didn't ooze out this time. OH MY! YUMMY! I think my body has adjusted enough to the fiber that I could even venture out to have 2 sandwiches a day. This is absolutely my new "favoritest" food/meal! |

I asked how many carbs in the other thread and they said it's 1.5 Net carbs, because the flax zero's out 4 carbs 4 fiber.
So I guess the carbs would be from the BP, Cinnamon and Splenda. Ah here it is at the top of this page Notes: 11.1 total carbs, 8.8 fiber, for 2.3 net carbs. Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 223mg Cholesterol; 284mg Sodium 11g carbs but 8.8 fiber to equal 2.3 NET carbs Last edited by Cablegriz; 09-21-2007 at 01:46 PM.. I use both these threads. They are a gift to low carbers.
The carb count is all about the fibre. The low count is all you need worry about, the fibre is the little gift that travels with the flax! |

I use 1/4 tsp. baking soda instead of baking powder and I nuke it in a 2 c. glass measuring cup. When I add cocoa powder, I use raspberry DaVinci's and then I top it with cream cheese and a tbs. of sf raspberry jam.
I have also made it savory and cooked it in a round ziploc container, split it and used it for a burger bun....good stuff. It's also good with an egg on top! I have used many different flavors and additions like nuts and berries. I will have to try the pumpkin. I made it once with cranberries and orange extract, too. I have also made that pizza crust and it is wonderful! I alternate between the muffin, hot flax cereal and flax pancakes for breakfast.

Hi Linda!
Glad to know you have tried the Pizza crust and like it, I shall be giving it a go this weekend. I used to use some of the flax hot cereal packs stirred into yoghurt for breakfast, but the 'meal' is so much nicer. I ordered a load of the cereals for my DD - in my avatar. She gave them back when she stopped LCing. I have rather a lot of it...maybe when the weather gets colder! |

Kissa, my hot flax cereal is 3T flax meal, 1/2-1 tsp of cinnamon and 1/3 c. water. Microwave it for a minute, add 1T coconut oil and a scoop of vanilla protein powder. Mix well. I also add a few blueberries sometimes. I've been subbing 1T of oat bran for 1T of flax meal for a change.

These are kind of ready mixed packs. I would never have ordered them for myself but they seemed like an easy option for her. Your cereal sounds great!
I used some of this when I made my very first muffin, very 'fibrey' but quite good. Last edited by Kissa; 09-21-2007 at 02:50 PM.. |

Dh is out of town tonight, so I think an experiment with the pizza crust is definitely in order.
I also make a flaxmeal cereal. I use equal parts flaxmeal, oat bran and soy protein. If you don't like soy, use whey. When I make the mix I generally use 1 cup of each. Store the mix in the fridge. To cook use one part cereal mix and two parts water. Stir and add in a pat of butter and a little salt. Nuke for 1 minute, stir and sweeten with splenda or sweetner of choice. Like I said, DH is out of town........ that was dinner last night.

BAck a few pages there was some discussion of making pumpkin muffins. I posted my recipe in a pumpkin thread a few days ago. I thought it might be appropriate here, too.
