Gotta watch my sneezes after I eat one of these, could be dangerous to those around me ![]() I skimmed these posts, but to punch up the nutrition and moistness, I add 1 TBS coconut oil in the batter beore I nuke. Am not on induction, so I add a few berries, nuts and unswetened coconut. Very satisfying. And the cinnamon helps metabolize sugar. Last edited by MNLisaB; 09-11-2007 at 07:50 PM.. Reason: sp |

Hi guys, I have two questions. Maybe I missed it (thread is long) but what was the NET carb count for the muffins--original recipe? I saw the total without fiber--it was really high.
Secondly, --I can't remember the second one--I'm so excited of the possiblity of pancakes and pizza crust I could scream! ![]() BTW, I get golden flax seeds for $1.99 a pound from a local international store--much better than brown--and grind it myself. |

My OneMinuteMuffins are never dry-maybe you should try increasing your fat whichever you use-butter or CO. Also when done nuking it should look a little shiny & wet on top-you may also be overnuking-sometimes mine only take 45 secs.

I have made these using NO butter or oil at all. The flax in itself is very good and fatty, you dont need to add oil. I hadn't made muffins in a long time but I plan to today cuz of this thread. I bake mine in the oven using a muffin pan w/ paper muffin cups.

I'm going to try the oven method as well - but have to say I like the convenience of 1 minute in the nuker - easy to do before work
How long do these keep? |

You would need to enter it the way you make it. I make 3 kinds, savory, chocolate (sometimes Chocolate Lava style), & plain w/pumpkin pie spice. Carb count & nutritrion vary for each one.

Actually, I'm looking for the vitamin stats off of the flaxmeal bag. Someone in earlier post was nice enough to give carb/fat/protein - but am looking for the others. My flax doesn't have nutrition label.

Today is my first day with THE MUFFIN - I'm pleasantly surprised at how long it kept me full. I ate around 8:30 and wasn't even starting to get hungry 'til about noon. Definitely an asset to my meal planning

I just made these and am enjoying them for breakfast as I'm typing this. They are delicious!! I've tried to find different ways to incorporate flax into my diet for several years now because of the great health benefits from the flax. However, I have found this to be difficult. I used to eat flax sprinkled on my daily lunch salad and got tired of that. Tried several hot cereal recipes using flax but hated the slimey texture--very yucky. I've baked a few batches of the flax muffin recipe and they were ok. But these one minute muffins are wonderful! Thanks again for the recipe!!

I made these today with coconut oil instead of butter and loved the subtle coconut flavor. It's just nice to have alternatives. I can't eat the same thing every day forever
I don't own any coffee cups that can go in the microwave (I have an old set of my grandma's but they have gold rims & would spark) so I've been using an old small mug. So they turn out round like the old Boston brown bread. So many things to try, a different container, in the oven instead of the microwave, savory, etc. I made up 5 sets of the dry mix in tiny plastic containers & have them stacked on the microwave. Speed & portability! Whoo-hoo! |

I didn't refrigerate because I figure I'll use them within 10 days. If they do spoil I'll report in.

Thanks for experimenting for us LOL I didn't realize it could set out that long...I'm glad! I just finished my muffin...mmmMMM! I added a tad more splenda today and a tad more butter. Also did 1/2 t. cinn. and 1/2 t. pumpkin pie spice. Does everyone melt the butter before adding or do you put it in solid? Yesterday I melted mine first and then mixed in. Today, I just added it solid (for time's sake) and when I popped the muffin out, there was still a little pat of melting butter on the bottom. I was very wide eyed at that point noticing how appetizing that hot muffin looked with the butter melting on the top! lol I'm amazed these things are legal.

I think flaxmeal is like nuts. You don't need to refrigerate unless you are keeping it out for weeks on end. A few days or a week isn't going to cause a problem.
I made mine with butter I left out on the counter so it was soft enough to mix in. Mmmmm, pumpkin pie spice, must try that. |

I take a few little slices of butter and mix them in - they are not usually soft enough to blend it and when I cook up the muffin, the butter is gone.
I personally, like the muffin better without any added fat. I don't get greasy fingers when I eat it and I don't think it affects the taste especially if you are adding extras (sandwich fixin's, butter, cream cheese, or "frosting") |

I melt the CO in the microwave first, in the mug. Then beat in the egg, then add dry ingredients.
