Oh I just made one for breakfast. After it popped out of the mug I cut it in half ..then toasted it!
I added cream cheese on top and it was GOOOOOD. I definitely like toasting it but since I cooked it in a coffee mug it was a bit ROUND in shape so I mighty try making it in more of a FLAT dish so when I cut it into two 'slices' of bread it will be more of the SHAPE to fit in the toaster. Hey for those of you who use CO instead of butter how much do you use? I only used 1 T of butter melted. Ive read various reports on teh amounts of butter. Some say 1 TSP. Other say up to 2 TBLS. I spose its a matter of taste. I did want to add that since the calorie count is not LOW I would advise people not to go toooo wild witht these things. I mean 230 calories is a hefty amount of calories for something your going to 'snack' on...jmo. |

I use 2 T of CO in my muffin...if I use more than that it tastes oily...but 2T seems to be just right for me. I'm enjoying the muffin SO much more than when I was just eating a couple of scrambled eggs for breakfast! The flax has really helped!

ok, I think I am hooked - more I think due to the fact that I love the cream cheese frosting and this is good vessel for dispensing it.
I cut my muffin into 4 thin slices and made 2 little cream cheese frosting sandwiches yum! Might have a savory one tomorrow. |

Ok - so I made a second one today.
In addition to the ingredients as listed, I added a teaspoon of cocoa powder, a dash of salt, and a squirt of Davinci Vanilla syrup (I have a pump on the bottle, and used one pump). I need to rethink the container I use, as it bubbled over my mug!! this was super yummy though, and I imagine with some sweetened cream cheese it would be totally awesome. I just split it in half and put it in my toaster oven to toast for a bit, and then had it with butter spread on it. Yum-O!

Thank you for posting the recipe! This sounds pretty good, and I'm also wondering if they couldn't be frozen and then toasted. I travel on business with my husband now and then, and it's almost always on the spur of the moment. Our client sites aren't always in places where there's even a little diner, so I'm making a "To Go" bag that I have stocked with food goodies so I won't be stuck in Nowheresville with nothing to eat.

I use a glass mug...it's a good bit bigger than a coffee cup. One time it went over the top but every other time it's risen up a little past the top and then sank back down. it's fun to watch! I put a paper towel under each one just to be safe.

eek savory??
I tried making a savory one today and it turned out wayy too DOUGHY even after toasting it! I wanted it CRUNCHY!
mm.I used 14 cup flax 1/2 tsp baking soda 1 L egg 1 T melted butter onion powder, garlic powder,salt and pepper I nuked it one minute but it didnt seem the right consistency (too spongy), so I nuked it again for about 15 more seconds. I then toasted it TWICE. Still it came out DOUGHY and SPONGY. ANy suggestions anyone?? |

Use less butter, maybe? My recipe calls for 1 tsp butter, not 1 T. Also, I use softened butter from the counter and cream it into the dry ingredients before I add the egg.

OK - Note to self: If you READ the recipe the second time you make the muffin, and actually use the 1/2 tsp of baking powder it says, instead of the full tsp you "remembered" it said......it won't bubble over the top of your mug!!

I'm wondering if this is something that can be make in bulk, say for family use, and does it have to be made in the microwave? Can I bake it? Is there a 'bread' recipe w/ the flax meal, etc?

I tried one today and I couldnt get past the smell! Do any of you thing it has a weird smell. I had to light a candle and spray febreeze to rid the house of it!

Baking powder not soda
I made my savory muffin this morning. I omitted the cinnamon. Added a bit of salt and a bit of splenda (didn't measure precisely, but about 1/2 tsp salt & about the same of spenda - maybe a little less. I was trying to pour the spenda into a 1/4 tsp and it spilled on the counter so used the 1/4 tsp and salvaged some from the counter - how cheap am I?! )I noticed it was a little soggy on the bottom so I popped the muffin back in the microwave (without cup) and nuked for a bit more (10-15 seconds at the most) Cooled it and it was fine. Had mine with lox and cream cheese! Soooo good! Thanks for the idea, Michelle! I sliced mine into 4 round slices and made 2 little sandwiches. I was only able to eat about 1/2 of one sandwich for breakfast this morning - just ate the other half now. I still have another sandwich to eat. These muffins are very filling! I love the idea that I can have sandwiches now. Not that I am crazy about the bread, I just like the idea of being able to hold something in my hand rather than always eating with a fork (not that I do that with a meat rollup, but it's just a little neater)

Yea Jo is was a funky smell. I was so pumped to try it too. I only microwaved it for 1 minute. This is the recipe i folowed. It was at the begining of this thread.
1/4 cup flax meal 1/2 teaspoon baking powder 1 packet splenda packet 1 teaspoon cinnamon 1 large egg 1 teaspoon butter I think im going to try it again tomorrow just to be sure. |

Morgan, mine just kind of has that flax nutty smell - but I gotta get up real close to smell it - it doesn't waft throughout the house in a way that I feel like I would need to get rid of the smell - odd.
I hope things go better tomorrow - they are actually pretty good |

Morgan flaxseed meal goes rancid really easily-I keep mine refrigerated. Smell yours before you make another and toss it if bad. I have never noticed a smell when I use my flaxseed meal-if it hasn't gone bad maybe it's just one of those foods you are sensitive to?

How long does your flax meal usually last refrigerated?
Today, I tried something different. I left out the splenda and used a little salt instead. I also added some dried veggies. Then, I cooked it in one of those gladware soup/salad sized dishes. I cut the muffin into two large slices, then toasted each slice. They were the perfect size for a sandwich! Next time, I'll soak the veggies first before adding them to the muffin mix. I'm so excited with the possibilities! |
