Last Thanksgiving, I substituted some poultry seasoning and then cubed my muffin. Tasted just like stuffing with turkey. I even drizzled a tiny bit of gravy on top. Deeeelish!

I made the one minute muffin with eggbeaters and canola oil. I had a bit much cinnamon in it so added some almond flavoring to it. It's ok. I topped it with 1T of cream cheese mixed with splenda and cinnamon and vanilla in it that I keep to put with a "crepe" of eggbeaters for bkfst. I can see trying it again, esp to get more fiber and Omega 3 into my diet and satisfy my baked goods tooth.

Finally got Flax meal and made a one minute muffin with stevia and coconut oil this morning and I am in LOVE with these! So good! I am so mad at myself for not buying flax meal sooner.

How about a 25 minute muffins?
![]() I have been so happy with all the OMM recipes and tweaks! They are so delicious, but I thought, what if I put it in a deep muffin pan (Wilton brand), mix a batch up at time, and freeze the rest....if you like that warm, delicious "crust" and soft inside fresh out of the oven, you will love these! So, here's tweaking Spongebob's Recipe a bit: ●▬▬▬▬▬ஜ۩۞۩ஜ▬▬▬▬▬ஜ۩۞۩ஜ▬▬▬▬▬ஜ۩۞۩ஜ▬▬▬▬▬● Cinnamon Flax Muffins Ingredients: 3/4 c ground flax meal 3/4 c vanilla whey powder 3 tsp of baking powder 6 Tblsp of Ideal Brown Sugar (Xylitol) 1/2 tsp salt 1/2 c coconut oil (melted) 1/2 c water (or sugar free syrup for more sweetness) 6 eggs 6 tsp of vanilla extract 1/2 tsp cinnamon Mix with hand mixer until moist. Scoop by 3/4 cups into a extra deep muffin pan (sprayed with cooking spray). Bake for 25 minutes on the second rack from top at 375 degrees. They are so delicious! ●▬▬▬▬▬ஜ۩۞۩ஜ▬▬▬▬▬ஜ۩۞۩ஜ▬▬▬▬▬ஜ۩۞۩ஜ▬▬▬▬▬● ![]() |

Wanted to share my favorite recipe for OMM's:
BANANA WALNUT In your micro container, melt and mix together: 2 tsp butter 4 Drops EZ-Sweetz (whatever sweetener you like) 1/4 tsp banana flavoring Then add and stir in really well with a fork: 1 egg Combine in a separate small dish: 3 Tbls almond flour 1 Tbls golden flaxmeal 1/2 tsp baking powder Add dry to wet, stir well, then mix in: About 1-2 Tbls chopped walnuts. Nuke about a minute. Toast. Slice. Top with a sweet frosting of softened butter, softened cream cheese, sweetener, and vanilla. YUM. O. In fact, I'm making a couple of these up, along with a container of frosting, to take with me to Cleveland tomorrow so I can enjoy these when everyone else is eating their pancakes.

I made the version where it is microwaved on a plate then fried in a skillet and topped with cheese... YUMMY CHEESE BREAD!!!

I can get ground flax at either my food coop or the regular grocery story. In the later it is in a speciality section where the stock things like garbanzo flour, coconut flour, etc. I am guessing you could order on line as well.

Genie80 is in the UK, so it isn't t hat simple for her to find.
Genie, do you have a Safeway Supermarket near you? I know some of my friends from the UK say they have Safeway's there now. If so (or anywhere elwe you might look), if you don't find Flaxseed meal, then look for Flax seeds (whole). If you have any kind of grinder you should be able to grind your own meal. Coffee grinder, blender, etc. I haven't had much luck trying to grind them in a food processor tho. Hopefully someone else from the UK will chime in!

Oh sorry didn't realize that she was in the UK. I know some folks in the UK refer to FLax as Linseed. Same thing in Jamaica so perhaps that is what she should be looking for.
