I read through 385 posts to find all the variations on the 1MM and I finally made one this morning. I added a bit of everything and it was delicious. I cut it in half and ate it with butter.
Next weekend as a treat, I'm planning to make the 1MM with cream cheese frosting and have it with a cup of "chocolate caramel enchantment: chai tea from Celestial Seasonings (I saw it at the Bulk Barn but haven't bought it yet). 2 Tb Flax Meal 2 Tb Almond Meal 1 Tb Cocoa 1/2 tsp Baking Powder 1/2 tsp Cinnamon 1/2 tsp Nutmeg 1 1/2 pk of Splenda 1 tsp Coconut oil 1 tsp Butter 1 egg Vanilla I also changed it up to make a herb bread (muffin in a sandwich container) so I cut cut it in half and have a tuna sandwich. It came out dense enough that I was able to cut it in quarters. Herb Muffin 2 Tb Flax Meal 2 Tb Almond Meal 1/2 tsp Baking Powder Dash Salt Dash Onion Flakes Dash Basil Dash Parsley Dash Thyme Dash of Garlic Dash of Chives 1/2 tsp grated parmesan cheese 1 tsp Coconut oil 1 tsp Butter 1 egg

This may be a little late for Thanksgiving, but man...I made one of these for the first time on Thanksgiving (I cheated, in that, I started "seeds" on Thursday instead of Sunday -- you know, on the ladder?) and I've been eating one a day ever since. Now, for the pumpkin muffin part of this -- I did it yesterday. All I did was add 1/3-1/2 cup of pumpkin to the original recipe, a little vanilla (I always put a little vanilla in the original anyway) and I actually forgot to put the butter in. Not to worry --- I made it in a coffee mug and I took it to work and ate it in front of everybody, and they were all wanting to know where I got it. It was delicious!!!

Wow thanks for the idea's guys! I dont have any flax meal but i do have Fax Z snacks hot cereal so I used that instead of the pure flax meal and it worked. The flavor could have been better ( i shouldnt have added cinnamon to the pecan flavored flax meal cereal LOL ) but it was good AND it had a true bran muffin like conistancy.
I mixed a little bit of cream cheese with a packet of splenda and a packet of true lemon and WOW i had a delish lemon frosting for my muffin. On top of it half of that thing is pretty darn filling! TY TY Last edited by Desertrosenla; 11-30-2007 at 08:48 PM.. Reason: typo ;) heh |

Well, two things I have done to this muffin in the past two days...
Yesterday, I added cocoa to it and had a scrumptious dessert muffin yesterday for lunch (after my salad). I also forgot to put the butter in again (what's up with that?). Today, I made the regular recipe, remembered the butter, but forgot the cinnamon . It still is delicious...it just isn't dark in color. I also have spread it with a little almond butter. Oh wow! I just had an egg Mc Muffin and it was fabulous!
I made the recipe as posted: 1/4 c flax 1 egg 1/4 tsp baking powder 1T butter And then I added a sprinkling of garlic salt and onion powder. Microwaved for 1.5 minutes. In the meantime, I fried one egg. When the bread was done, I cut it in half, added cheese to one side, put the egg on top and then fried the sandwich until toasty. It was fabulous!!! I was going to do a sausage egg mc muffin but was worried it would be too much weight for the bread but I think the bread could have handled it. Sooo good!!!\ But, I too would still love the pumpkin muffin recipe ![]()

Oooh, anyone remember those cheesey garlicy bisquits from Red Lobster? Well, if you make the recipe without the sweetener (just the flax, baking powder, butter and egg) and add some shredded cheddar cheese, garlic salt and onion powder you'll get a similar taste. Soo good!

I've been making the muffins without the Baking Powder lately and I like it better.
For me it seems like the BP dries it out more and has a slightly salty taste. I haven't notices one bit of difference without the Baking Powder. Thought I'd chime in, in case you were out of BP, that you can make it without! Bethy |

all these ideas sound great! I'll have to experiment a bit with it. I turned mine into french toast. I've been using 2T golden flax, and 2T almond flour to make the mixture.In the past I did not and I didn't care for it as much. Anyway just made it the regular way in the large coffee mug and sliced it up into about four round slices put some butter and a little bit of SFmaple syrup. It was pretty good. Very filling with my 2 piecies of sausage. I could not eat it all!

living healthy, I'm so glad you posted because I was just about ready to ask if anyone has eaten more than one a day, and how are they doing with it!!
Same wave length! I have had a muffin in the morning and been wanting to make one into a wrap or pizza crust, but have been afraid of too much flax in a day. Anyone have advice on that? Bethy |

To make things even quicker in the a.m. I premix the dry ingredients for 4 muffins and keep in the fridge in sealed container, then I just need to add the butter, or coconut oil and the egg along with 1/4 cup of the dry mixture,and pop in the microwave. Saves all that measuring...taking out and putting away ingredients when I'm in a hurry.

and I would like to know what the controversy is about flaxseed and carb count--on one of the OMM threads, someone stated that there is debate over whether or not flaxseed carbs/fiber grams is actually equal or not--I noticed that the Bob's Redmill has 4/4 for two tbs--but I noticed that the bulk bin counts were different--8/4 I think--is there any consensus here?? If I eat more than one a day I would like to figure out a way to count the carbs

not really, just wondering if the use of mayo would add any flavor to the deal, or just make it easier to make all together. I made one of these tonight and it was much better than I expected for sure, although it lacked a bit in just flavor. I would smell the cin, but was not sweet or flavorful, that is why I thot about the mayo...

I have seen the recipe repeated for the OneMinuteMuffin incorrectly-the butter or CO should be melted first in the mug. That's the way I originally learned to make it and have no problems with dryness or smoothness. You can also Google it.

Adding mayo to it reminds me of an old recipe going around (pre-lc) for a cake made with mayo and cocoa...so, I don't see why you can't do that.
On the other hand, I love these so much, I've eaten one every day since I found out about them. I have never had mine turn out bad at all...one time, I left out the cinnamon by accident; another time, the butter. Sometimes my butter is soft, sometimes it isn't, and sometimes, it is Smart Balance ![]() I am a One Minute Muffin monster. Lisa - feeling a little better but still have that cold... |
