What can I do with almond meal?

I meant to buy almond flour to try some baking but bought almond meal instead. I know I've seen muffin recipes here with it, but can't find them now. Any and all uses you have for it, please share!

Yummy's right... they should be the same thing. Here's the link to one of the muffin posts... Thank You 4 the 1-minute Muffin Recipe!. There are a million tweaks to the recipe...

this is one that I follow...

One Minute Muffin

1 to 2 tbsp of butter (melted)
1 egg
1/4 cup almond flour or flax meal (or combination of both)
1/2 tsp of baking powder
1 tsp of cinnamon
1 packet of splenda

Melt butter in a ramekin or coffee cup, when it's cool, add the egg and mix (most recipes call for adding the butter and egg after the dry ingredients, but this way you don't have to use a separate bowl to melt the butter first). Add almond flour (or flax meal), baking powder, cinnamon and splenda and mix everything together well. Microwave for one minute. Very yummy!

I love the Almond Thin Crackers... I usually double or triple the recipe and throw them in the freezer... that way I can pull some out anytime I'm in the mood for a cracker... Almond Thins

Also, you can do other things with the almond flour/meal... for instance I used it last night to coat some chicken breasts, fried them up and topped with marinara and fresh mozarella for chicken parmigiana... it was good and the almond gave it a nice texture. I also like making chicken francaise with it... chicken francaise...

They are? Almond meal isn't very fine and I assumed flour would be more like, well, flour. Interesting. Thanks for the recipe suggestions!

I think almond flour is a little bit finer, but they both work good for baked items or breading. I think it depends on where you buy it if they call it flour or meal. The almond flour has a less grainy texture, but I kinda like the grainy texture myself.
