I made this for the first time last night and it was WONDERFUL. No eggy taste at all. I used an 8X8 pan and cut it into 9 squares. The whole family loved it. Great pumpkin pie substitute.

TYPO! TYPO!! My bad. It took over ONE hour to bake. Might be my oven but I reset the 20 minute timer three times plus left it in a bit longer.

Freeman, I think the recipe ingredients are complete other than she sprinkled chopped pecans over the top, which she didn't include in the list. She probably didn't measure them, just sprinkled some over.
Not putting them in the ingredient list is confusing. But they can probably be left out/off.

Thanks for your comments. I'm assuming the "1/2 tsp" at the bottom of the ingredients list is some spice.

Freeman, it looks like she was just breaking down and adding in the individual spices that make up the Pumpkin Pie Spice. I would just leave the 1 t. cinnamon, since it is a great addition, and add 1/2 T of pumpkin pie spice. That is what I did and it was wonderful!

The third spice in pumpkin pie spice is usually nutmeg. So I would guess 1/2 t nutmeg.

To me the 3rd spice would be ground ginger. Cinnamon, cloves, and ginger are the three spices that the Libby's pumpkin recipe calls for.

There are TONS of pumpkin pie spices out there. Generallly you can combine whatever "hot" spices you have on hand (um not chili powder LOL)

I have, using about 8 drops of EZ-Sweetz and 1/4 teas. NuNaturals stevia.

Oh my goodness, this was so delicious. I made it with the original recipe and put it in to a six muffin tin. Delicious hot and cold!

It was missing something. I just can't put my finger on it.

You didn't forget the vanilla did you?
I think extra vanilla and or extra spice could up the pizzaz of this dish.

ETA: O and if you top it with home whipped cream (AS sweetened) I bet its not missing anything! :wink:

I didn't put any vanilla. I wanted to, but I was trying to follow a recipe as written for once in my life. LOL. I tend to get a bit crazy and start modifying, but this time I just added what I wrote down from the recipe. I don't recall vanilla, but maybe I skipped an ingredient when I was writing it down.

Tastes are different, I made it once and ended up throwing most of it out, and I rarely ever do that.
