Chipotle Lime Salad Dressing
I had this at a nice restaurant a couple of weeks ago and now I'm addicted to it! It really spices up salads. Here's my version. There are fancier versions online if you do a search.
3 parts olive oil 1 part (or less) balsamic, rice wine vinegar, or any other vinegar of your choice Juice of one regular size or two key limes A little LC sweetener (I use a few drops of liquid sucralose) Chipotle to taste. (I use about a tablespoon of ground dried chipotle, but the canned variety would work fine.) Salt & Pepper (I use Tony Cachere's instead). Sometimes I add finely minced fresh garlic. Whisk.
