Start Date: restart again 6/28/08
baked/roasted chicken leg quarters - yum

My grocery story has chicken leg quarters on sale for $0.39 a pound. So I got a pack and put them in my Pampered Chef Stonewear roaster. Sprinkled salt, pepper, garlic and onion power on them. Then I sprinkled some Liquid Smoke and some Tabasco sauce (not too much!!) on them. Covered, baked at 400 for one hour, took off the lid, kicked up the temp to 425 and cooked another 20 minutes to crisp the skin.

RAWKS

And it smells so good in here - like a BBQ

That sounds good. What does the liquid smoke do for the flavor? I bought some but wasn't sure when to use it or how to use it?

the liqid smoke gives a bbq'd smoked flavor to the meat. Much better to me than regular baked chicken.

Gives it a smoked/BBQ flavor, like what you'd get at a BBQ place but way less $$

Since the first post here, I have now made this 3 times and not eaten it ONCE besides a nibble. My family LOVES it.

Lisa that sounds delicious, and our supermarket has a special offer--buy one kilo of skinless boneless chicken breast and get one kilo of chicken leg quarters free. Guess what's on my shopping list. I don't have a pampered chef, would an ordinary roasting pan covered with aluminum foil do?

Pat, I am sure a regular roasting pan would be fine. I have just found that using the stone roasting pan really tenderizes stuff. I love to pop a cheap roast in it, cover with mushroom soup (or now that I learned it is lower carb, campbells chicken/mushroom soup) and bake a couple hours. Very tender!!

This is a great recipe! A definite winner in this house! I made the chicken last night using thighs. The seasonings I used were Old Bays Blackened seasoning, liquid smoke, and Louisiana. I don't have a roasting pan so I used a glass 9x13" and covered it with aluminum foil. Thank you for the recipe!

They had whole chickens on sale at my grocery store. I got 2 of them and put them in the roasting pan with the same seasonings above - YUM! And very tender. Now we have white meat for the white meat lovers!! I think I might use liquid smoke and hot sauce on the turkey for Thanksgiving this year!!
