"Aussie" Squash Fries (w/pic)

I was wanting some of Outback's Aussie Fries and had some fresh yellow squash. Here's what I came up with...

Ididn't really measure anything.

"Aussie" Squash Fries

Long neck yellow squash (or possibly zuchini)
cheddar cheese, shredded
bacon, cooked and chopped
Olive oil, salt, & pepper (plus other spices to your taste)

Cut squash lengthwise into fry shaped pieces
Fry in olive oil until browned and done.
Remove from skillet and place in oven proof baking dish.
Sprinkle with cheese and bacon pieces.
Heat in oven until cheese is melted.
Serve with spicey ranch dip.







Pretty yummy!

Did you make your own spicy ranch dip or did you buy it? I've never seen it ina store and would love to have some. If you made it, can you share the recipe?

I made it using the ranch dip dry mix. I know it's better to make your own dry mix but I was in a hurry.

I didn't have an exact Outback recipe for spicy ranch, so I improvised. My mother thinks I'm the "Queen of Improvization"! I think Outback uses horseradish in their dip (just a guess) and I didn't have any of that 'cause I really don't care for it. I was looking for some taco seasoning to add a little spice and couldn't find any of that, soooo I just added a little chili powder. Worked for me.

My DH and DDs really liked it...can't really go wrong with bacon and cheese.

For the "to lazy to fry" bunch, check out Kevinpa's Zucchini Frys and "combine" the ideas. . .

Count me in the "to lazy" column. . .in just about everything!
