Charski's Scotch Eggs
These are from Charski and have been a favorite of ours since I started to make them a month or so ago..I just used Turkey Breakfast Roll Sausage and after using other sausages, this was the easiest to "roll your egg in"..
Make sure your egg is dry.. There are some recipes on here for Sausage Muffins, try a search and see what you turn up. My favorite portable breakfast is Scotch eggs. Hardboil as many eggs as you like, cool, and peel. You need about 1 pound of bulk sausage for each 5 or 6 eggs (depending on their size.) Divide the sausage into equal portions to cover your eggs, roll into a ball, then flatten and press one portion around each HB egg. You can just bake them as is, or you can roll them in grated Parm cheese (the green can kind is fine) and bake - I do 350* for about 20 minutes or til the sausage is cooked through. These are very easy to grab & go and they're really tasty! __________________ |

Well, I do like them warmed up a bit in the micro and cut in half and eaten with a fork..But, I'm sure people eat them right from the fridge. |

Dh is eating one right now for breakfast..
You can combine turkey and pork if you want fewer calories..Total turkey isn't that great, but they are so easy and good. |

I haven't been able to find sausage meat in a while, but I can remove the skin from bratwursts and mince in my food processor. Trouble is they have so much sodium in them.

I found some ground pork breakfast sausage (no nitrates) at Henry's Market. I bought a couple lbs so I think I will make these this weekend. They sound so good! DH has never heard of them but he is intrigued.

Eggs are .6 each, more or less, and the sausage will list the carbs per serving on the package - or if it's PURE pork sausage without fillers, as in from the butcher's case, it should be 0.

I dont even bother to roll the egg anymore but i layer the sausage in a muffin tin.. put egg ontop and put another layer onto of the egg
they bake in the muffin tin shape and i love them next day cold |

I've been making these for years-- here's a tip, roll them in seasoned soy powder or a combo of crushed pork rinds and Parmesan cheese-- they don't get slimy that way.

Do make your own sausage with ground turkey. The recipe of spices in #14 sound really good. But add fennel seed for that sausage taste.

This is a super old thread, but I wanted to make some scotch eggs today. I couldn't decide between frying or baking them. I went with Charski's baking method since she is an amazing cook and I trust her judgement and recipes.
So. Freaking. Good. I think fried would be good too, but this was much easier and less mess. |

Buy ground turkey at the store and make your own. That way you can KNOW whats in it.
