Both. Some I put seeds in because it's going to sit a bit and it gives the gel time to 'happen'. Others I put gel into it to immediately thicken to serve them. |

Larry, ever since you mentioned to me about using chia in eggs (in one of the other chia threads), i've been craving eggs. My dinner tonight was eggs scrambled with Parmesan cheese, sun-dried tomatoes, spinach and of course......chia!! I only have the black seeds, so I just pretended it was pepper. It was mucho yummy!!!!! Thanks! |

Now the next big question.....how much seeds or gel do you add to the smoothies? Some sites I read 1 tsp...and others said 1 tbsp?
I can not wait for my chia seeds to come in!!!!! |

You know - I eyeball the amount of gel I put in smoothies - it varies by whatever-else is in them. At least equal to the amount of yogurt, or cream I’d be using. I’ve not used just plain-ole-seeds unless I have time to let it gel afterwards, and then I put in about 1 tsp per cup (I guess-ti-mate total volume of finished smoothie). Perhaps others will chime in as to what they do...I do think there were some ideas listed in the Chia Recipe thread. |

Chia Seed Recipes
For whoever out there interested in more chia seed recipes, I found this low carb blog DARdreams with quite a few of them from puddings to pizza crust (using ground chia seeds, flaxmeal and coconut flour).

I've been making chia gel with 1tsp of seeds and adding it to my coffee in the morning. I like it, even if it does sound kind of gross.
I did discover that my body doesn't like me just sprinkling the seeds in and on things. I spend a lot of time in the bathroom about 2 hours after eating the seeds (TMI). Anyway I am going to try some recipes using the gel. May try the Chiannaise recipe posted up thread. I eat a lot of salad in the summer so this might do well as a "ranch" dressing. |

Mobear, I added 2 tbsp of chia gel to my coffee this morning and didn't find it gross at all. Was a little concerned at first it make thicken the coffee but it really didn't.
Want to try diluting store bought salad dressings with chia gel to reduce the calories too. But I'd have to grind the chia seeds so that they would not be in evidence to sneak it past my DH |

Found this following info on suretalent-books.com
QUOTE Gluten-Free Chia-Seed Slurry and Ice-Cubes: This chia seed slurry mixture is used to extend and improve all sorts of gluten-free recipes; also great frozen! Creating a "chia slurry" is the key to using chia seed as an easy addition / substitution / alteration / modification ingredient in many gluten-free recipes. This slurry will end up providing a gluten-like (i.e., "glue like") binding power to many recipes while introducing additional moisture and "bounce", elasticity, sponginess, and the like, that you would otherwise associate with Gluten-containing products. And, when frozen into "chia slurry cubes", these frozen chia-mix cubes have proven incredible in making smoother, creamier, dairy-free "shakes" or "smoothies" or slushies, or whatever. They add an amazing texture-smoothing / gelling quality that thickens up a drink without adding anything unhealthy to the recipe; giving frozen drinks some "creaminess" without any cream. UNQUOTE Essentially, the author of the article uses the ratio 1.5 to 2 tbsp of chia seeds per cup of water depending on the thickness of slurry and amount wanted. After the chia seeds are hydrated, puree the gel in a blender. The resulting slurry is to be used in gluten-free baking replacing part of the liquids in the recipe. Some dry-ingredient amount-adjustments may be necessary to achieve optimal results. The author also suggests making the slurry immediately before using it in a baking recipe. This keeps the suspension of particles consistent, and also adds another important baking element: a bit of air volume. To make slurry ice cubes, take freshly-blended Chia-Seed Slurry and pour it into ice cube trays and immediately freeze for later use. |

Bumping it up for such good ideas. I like chia fresca made with some lime juice and a bit of crystal lite lemonade flavor. Plan to make some of the pudding with coconut milk and vanilla today, I have never tried it in anything like that before.

Made LindaSue's Better Than Boxed Pancake recipe savory. To the 3T (not 2 1/2T as in recipe) Vanilla Whey, I added 1/2T ground chia. Used a T of olive oil and T of water. 1/8t baking powder, 1/8t rosemary,1/8t Italian seasoning, 1/32t garlic powder, 1/32t salt. And the egg. This made 1/2c batter. I poured two almost square patches of batter on the lightly greased griddle. Worked like a charm...2 pieces of BREAD for my ham sammie. By the way, the pancake is fabbo. lol

Reviving the thread....
ladeeda asked about using chia in a flour mix. I ground chia (i.e. chia meal) and have started using it whereever a recipe calls for flax meal. I can't tolerate flax but chia doesn't bother me much. I like the crunch of the seeds sprinkled on salads. As for that chia slurry....sounds interesting. I wonder if one could use chia meal instead of the seeds and avoid having to blender it.....has anyone been using the slurry? |
