Which Linda Sue recipes freeze the best?
This is a spin off of the favorite Linda Sue recipe thread. What I find great about her recipes is that the ingredients are not too exotic yet the dishes are delish! http://www.genaw.com/lowcarb/index.html
I cook low carb "for one" and I would like to choose entrees that freeze well, with the idea of freezing in single serving containers for quick lunches and dinners. So, which one's have you cooked and frozen and still were delish? |

The majority of them are freezable. She usually has it listed near the bottom of the recipe if it can be frozen.
The deep dish Pizza freezes very well! |

Pretty much all, as everybody else has indicated....
But, if you are serious about this WOL, you need to be able to look at EVERY recipe and evaluate it for freezing capability..... You have to be cautious with recipes that are heavy on dairy products and natural cheeses.... Otherwise, there is a LOT of license to freeze.... |

Well, I try to remember to note whether they can be frozen or not. Sometimes I forget to add that or else I haven't tried freezing something to find out if it freezes well. So, just because a recipe doesn't have a note about freezing doesn't necessarily mean that you can't.

I did a search for OAMC (Once A Month Cooking) on this site last year and came up with some interesting finds. You could implement any of Linda Sue's recipes for the ones you find. Here are some which I use to help me save time. I am the only one doing low-carb in my house. Now I when I make things for the rest of the famiily that are not carb friendly, I don't have excuse. I plan ahead and take something out for lunch & supper for the next day and let it defrost in refrig...so worth the time!
BREAKFASTS * any quiche will do * any egg "muffin" LUNCH and DINNER * chili, soups with no cream base freeze best. * brown hamb meat, add taco seasoning-portion it out & freeze for fast taco salads * casseroles-italian, white castle pie, lasagna, are my standbys-freeze in portions. * chicken breasts, whole and in strips- grill a bunch at a time-portion-use whole as a main dish (like pizza chicken) and use the strips for your salads. I like the grill flavor! * tuna muffins and patties- just nuke'em (I love these!) * tilapia- it usually comes in a packages with each piece indiv. sealed. * Hamb patties-just separate and grill-try different toppings. (chilpolte and cheese, avacado with bacon & tomato, etc..) Have bacon fried and ready for quick lettuce rolls "sandwiches", (you can fry the bacon and freeze it too) I also make deviled eggs a couple times a week for a quick snack, these are hunger killers for me. One or two and I'm not hungry for hours. Hope this helps Renae

I was kind of looking for folks personal experience with freezing her recipes. I have observed where Linda made notations on some recipes regarding their freeze-ability. Renae, your tips are great. ![]() Thanks again! |
