This is one of my own creation. I don't care for a lot of sauce or cheese on my foods in general, and I prefer a lighter flavor and texture. I also love to cook with fish. This dish has kind of a "provencal" flavor and it takes about 5 minutes to prep before baking. My whole family loves it.
Ingredients: Tilapia filets pre-sliced mushrooms (1 package) fresh diced garlic, oilive oil, parmasean cheese Directions: Place the tilapia fliets in a baking dish and drizzle 1-2 TBSP olive oil on top. Sprinke garlic on top of fish and cover with the mushrooms and sprinkle of parmasean. Bake at 350 for 30-40 minutes, depending on the thickness of the filets. This has a wonderful flavor due to the garlic and mushrooms. I also like to add zuccini and some sliced tomatoes. Olives might be nice, too, although I have never tried it that way. |

Fried Bologna
Bologna LC BBQ sauce (Like KC Masterpiece Classic) Cut bologna into strips and fry in LC bbq sauce. Eat with a fork! Chicken tenders Roll chicken in beaten egg and roll in Parmesan cheese (green can) and fry. Great thread! |

Salmon sauce:
Equal parts mayo and sour cream (I usually do half a cup of each) Lime Juice (a squirt or two...) Tons of fresh dill, chopped. (a handful, dried works too, but add more) Mix and spread over salmon while it grills. It cooks nicely and gets crunchy around the edges. |

I didn't post it, but I make them big enough to hold up the chicken but allow the chicken fat to drip down below the bird. I guess it would depend on the size of your crock.... and I'd cook it on high.....

My husband goes fishing alot and since we have been low carbing, we frequently do this recipe with fish to bake it:
top with oil/vinegar and italian seasoning and bake --we used to use bottled italian dressing or top with parmesan cheese with any seasoning of your choice and bake -we like Old Bay They are both delish!!! |

I really love to bake fish that way. Lately, I use some butter on the fillets and then sprinkle some dill on top. Oh, it's just so good. If you spray the pan first or line it with foil and then spray, the clean up is much easier.

Parmesan Ranch Chicken
oh... I just made me and my husband's favorite chicken tonight and realized it's a 3 ingredient recipe... so here goes
Ingredients:
Mix parmesan w/ranch mix to taste (depends on amount of chicken used. About a 1c parmesan to 1/2 pack of mix ratio for me). Wet tenders with some water and roll in mix to coat very well. Place on baking sheet covered with foil for easy clean up. I usually put any leftover mix on top of the chicken, the more the better. Bake at 425 for about 10 mins or until cooked through. Try and catch them as soon as they are done so that they are super moist. So good... yumyum ![]()

tilapia fillets oil beef fajita seasonings Brush the fillets with oil then sprinkle fajita seasonings. Grill indoors or outside. AWESOME. |

Boil up a chicken. Throw the skin away. Shred the meat. Fry it til crisp in butter with salt, pepper, and garlic powder. Easy! Plus, homemade chicken broth for later use.

Bok Choy Soup
1 small bunch bock choy loosely chpped including leaves 2 green onions finely chopped saute in butter until just tender and add to 24 ounces of chicken broth, simmer gently. Wonderful for those days you want something light or the tummy is icky. |

My hubby and daughter adore chilli paste and garlic! We buy it in the gallon containers from the Asian store. It lasts us several months. They put it in a condiment bottle with the spout cut short so the opening is bigger.
The chilli paste and garlic is usually used as an ingredient in cooking and the Sriracha is used like a condiment (ketchup). This is used in Crack Slaw also. 1 pound hamburger browned with 1 teaspoon each garlic and onion powder drain Saute 1 bag of rainbow salad or broccoli slaw in 1 tablespoon of sesame oil until crisp tender. Toss with hamburger and add chilli paste and garlic to taste.

I wanna toot my horn and ask that this become a post it... oh wait, its sticky isn't it? lol... I was thinking post it notes just then... but how about it.
There are a lot of genius ideas on here and its nice to have a steady menu, but to know that I can come in and change it up too so that things are different month to month. my absolute fave dish on this thread though, has to go to the chile roast beef. OMG, I will never make a roast any different from that ever again!

Chili Mac (one of our favorite fast meals, even for our young kids)
Dreamfields elbows, cooked 1 large can chili without beans velvetta chunks to taste heat all ingredients and stir, it is also good we found out if you have some leftover grilled hamburgers cut up in it and hotdogs too! |
