Baked Coconut Custard
Any suggestions for low carbing this recipe? Thanks, Ro
BAKED COCONUT CUSTARD Ingredients: 1/2 cup milk 1 cup coconut milk 1/2 tsp grated nutmeg 2 eggs 3 tablespoons sugar Preparation: Heat oven to 250 degreesF. Beat the eggs and stir in sugar and liquids, then nutmeg. Put into a greased pie dish and stand in a shallow pan with water. Put pan with dish into the oven. Bake till custard is set (about 45 minutes). |

CRosie: I have made coconut custard alot..hmmm..I would ditch the real milk
and up the eggs to 4..and use Splenda...If you want a more coconutty taste, then you could add a bit of coconut extract or any extract you would like. |

I agree with Carolyn. Lose the milk, use the full can of coconut milk (although I highly suggest you drain the watery part), add a few more eggs, some additional flavorings, and use a sugar sub.
