I don't know, but where is the harm in just doubling up, day by day until it stops working?

Clearly you will need to look through the glass of the micro,because it will take longer than a minute to cook!

If you do that, can you confirm which version you tripple, and your baking temperature and time? (I'm assuming you are using metal muffin tops so will bake rather than nuke?)

I believe they freeze well, back in the thread some people talk about that, also baking times.

Stego, search this forum. Try #53 and you could quadruple the recipe and bake it in a glass loaf pan. Then slice it whatever way you want for sandwiches.

So I finally tried the famous 1 minute muffin today...made it with almond flour, and it is SO good! I love "spice" breads and cakes, and that is what this reminds me of. I love that it's so easy to make, and it slides right out of the coffee mug. Put some butter in to melt, and it was fab. Thanks so much!!!

I posted a recipe for tripling this, using a glass loaf pan, in the microwave. I used it for meatball sandwiches, and it held up AND was really, really good. Here's the recipe with pictures.

fyi, my small slice of heaven lately is a sweet 1 min muffin with double devon cream that I've sweetened slightly with splenda. oh my.

I made this in my muffin top pan! My favorite now! Floopsies are my 2nd fav.

3/4 c almond flour-Trader Joes "just meal"
1 1/2 t baking powder- 2 drops liquid splenda
3 eggs
3 T Butter

350---20 min or so

TJ's meal is "speckled" I suppose it has the skins on.

Made 6....very close to honey wheat bread. What a pleasant surprise!

I made the original recipie and was blown away by how good they are. I tried to write down some of the tweeks that sounded good, and ran out of paper. Gonna try grilled cheese in a day or two.

Great recipe!

I love this recipe! I was not sure I could stick to this WOE again but I think this just might be the answer. I had one this morning and I felt so full for such a long time (over 4 hours now) -something that hasnt happened to me in awhile.
I made mine with 1/8 flax and 1/8 ground pecans and it was so good!
I wont be having this all the time of course but it just might make the difference between sticking in there and quiting all together.
Thank you to whoever created this and to everyone who has contributed to perfecting it!

This basic recipe is one of the reasons I have been able to keep doing low carb. I have one 5 or 6 mornings a week. It is easy to tweek things to get different tastes etc. It has also saved me many a time when I was stalking the kitchen looking for "something". At those times more often than not I would find something high carb that I just couldn't resist. Now I make an appealing muffin, make it extra sweet. I eat it with some butter or almond butter and a large glass of water and I am so full and satisfied that I leave the kitchen alone. I have given this recipe to so many people and all of them have gone crazy for it.
