Like Lisabinil, I use butter. I also use Olive Oil...so for the savory, I use oil but the sweet I use butter (1 tbsp) and they are never dry, always moist. Perhaps try nuking it for 50 seconds? If I nuke mine for 1 full minute, it will be a tad firmer and more dry, so I usually cook mine a little shorter than a full minute.
I use 1/2 almond flour and 1/2 flax for breakfast sandwiches (egg / ham / cheese). And for the "dessert" version, use almond flour and stick a sf chocolate (Dove) in the center, while it cooks. Yum!!! I like to use the savory recipe for meatball sandwiches, I just double the recipe and put it in a loaf pan to microwave. When it's done, I cut the "loaf" in half, and then slice each half in half. Makes two good-sized sandwich buns / bread.

It should be a little shiny and a tad bit wet looking after you are done nuking it-it shouldn't look dried out. It sets up a bit more after nuking.

I just tried your original recipe Gary and it is so easy and good. I put some butter and sugar free jam on it. Yummo! I can't wait to try the savory one. Do these hold up well for hamburger buns?

Hey Mackenzie-
Aren't they good? Regretfully, I'm not the original but did some experimenting with lisabinil and others. There's a lot of good info here in the thread. Yes I think it holds up great to buns. I have a post for a meatball sandwich I used these for and they were the BOMB! Here's the link. Heck if they hold up to a meatball sammie, they'll hold up to a burger! Always worth bumping. Lately I've done these no spice and unsweetened and cooked in a little round tub to make a perfect "english muffin" to toast and make a "One Minute McMuffin" with.

Mmmm... english muffins.... yum, eggs benedict! I was thinking a Tbsp or so of yogurt may give it a better english muffin taste and texture.... hmm I think I will try that this weekend for family breakfast....

I tried the Chocolate Lava cake last night and LOVED it. That is going to be my birthday cake in November. My 8 yr old son really liked it too so we split it.
This morning I substituted raspberry SF syrup for the chocolate syrup and left out the cocoa. I also used 1 T of almond flour with 3 T of flax meal. I topped it with my own raspberry flavored cream cheese. I took 1 T of cream cheese and mixed in 1 tsp of SF raspberry jam and spread that over the top. YUMMY!!!! |

I LOVE this recipe. Wish I'd had it when I first started locarbing. I've played around with it using different flavored extracts but I think the one that surprised me most was leaving out the cinnamon and splenda and substituting poultry seasoning and a bit of salt. I cubed the muffin while still warm and used it for stuffing with some slices of turkey breast and a little gravy. It's so moist it really tastes like STUFFING! I hardly got to eat any of it because the whole family wanted to try it. Big thumbs up all around.

I use all golden organic flax=1/4 cup. I just do the cocoa powder to taste-some days I like it darker.

lol I wrote the recipe down wrong for the chocolate muffin .....and made it without the flax
....just the egg , vanilla , stevia , heavy cream & butter and it was real good it's funny because I thought it was missing something but tried it anyway and it turned out good I ate it .I make the 1 minute muffins all the time with lemon extract & poppy seeds if you double the recipe you can get 6 muffins out of it... wow Decodiana what a beautiful cat he looks alot like mine in my pic but Speedy has an orange nose
