French Toast Perfect!! I couldn't resist someone's suggestion to make it in a flat pan and then dip it in egg and a little cream and fry it up like french toast.. OMG it was the best french toast I have had since low carbing!!! I did use some Maple Grove Farms sugarfree Maple syrup on it and it was PERFECT!

Did anyone try making a pumpkin one yet??? I made one with DiVinchis pumpkin sugar free syrup and it was fine but I think it needs pumpkin in it too..Tomorrow I will buy a can..

I had read somewhere that someone made a banana muffin and they really liked it. So, I did try it yesterday.
Instead of 1/4 c. flax seed meal, I used 2 T. flax seed meal and 2 T. almond flour, I also used 1 t. banana extract and I added about 1 T. walnuts to it too. It really turned out great! It does taste a lot like regular banana bread and when it came out of the microwave I put a little butter on top and of course the butter melted - and the whole banana muffin was so delicious! |

The possibilities are just endless. Was there ever a more adaptable recipe. Most 'baking' has to be so precise. This just seems to adapt to whatever any of us do to it.

![]() I'm glad to hear that you've been eating the 1 minute-muffins too! ![]() I've had a few this week, I try to limit myself to 1 a day - I just love them!!! I'm not exactly sure how much I've lost yet - I just started on tuesday 10/9 and then by thurs. a certain TOM happened to me, it's about a week early too (which never happens to me). Anyway, I know my wedding rings are lose and my watch is lose and I know that I started on 10/9 at 299.5 and was down to 296.5 by thursday morning. Only 2 days on induction and had lost 3 lbs.! I've continued to eat 20 carbs or less per day even thurs, fri, and today. I'll be anxious to see what my true weight loss is when this is over in a day or so. But, man - one day I made the 1-minute muffin and just buttered it and ate it like that. Another day, I added the banana extract and about 1 t. of walnuts - and it really tasted like banana bread! Yesterday I made it a bit more savory and left out the sweetner and added a little salt, pepper and garlic powder and then used it with my egg salad to make an egg salad sandwich. It was great, I really felt like I was eating a real sandwich - the bread tasted very similar to whole wheat bread. Today, my husband wanted McDonald's, so I grabbed myself a double cheeseburger and knew I would eat it at home with a savory 1 minute muffin. That's just what I did, I took the 1 minute savory muffin, the burgers, about 1 t. of mayo, 1 t. of low carb ketchup - and it was excellent! It was one of the best burgers I've ever had! Another good thing I think, would be to make a tuna salad sandwich on this! In my muffins, instead of 1/4 c. of flax meal, I use 2 T. of flax meal and 2 T. of almond flour. To me, it makes the muffin even better!!! I do want to add that yes, I am in induction and shouldn't have nuts - but I just wanted to try a little bit and if it stalled me or made me gain, I would stop. It didn't do either and I seem to be losing at a great rate! These muffins are just wonderful - you can do so many different things with them! I have a nice big, round coffee cup that I use to make these - so when they come out of the microwave - it's shaped just like an english muffin. I just cut it in half to make a sandwich. I'm really hoping I will still be allowed to eat 1 of these everyday and still keep losing! 10 years ago when I tried low carbing before, I wish I would have had this recipe! Two things I miss the most during low carbing is bread and ice cream. |

flower75 - I can relate to TOM. I can't be1ieve I started induction 5 days before TOM. But I did and it's going good. Had major cravings on day 5 but that cou1d have been induction or PMS. I'm going to try the cream cheese muffins and see if they satisfy me the way the 1 minute muffins do.
There are some rea11y good 1ooking recipes for 1ow carb bread in this forum that I want to try. |

As if this recipe needs another variation----I leave out the oil, but add 1 tablespoon of peanut butter. It's not heavily flavored, but I really like it.

Some personal observations on the discussion about flax, flax muffins, Dr Atkins, & induction. Again, personal observations...your mileage may vary. A couple of these observations are kind of graphic, so you may not want to read this if you're eating.
![]() As you can see, I'm a large person, so it seems as though everything has to occur in larger quantities for me to make a difference. I've started lo-carbing about 5-6 times. On about 3 of these times, I quit due to...shall we say....bathroom issues. Of one form or another. Okay, if I wasn't constipated, I was having diarrhea. Not sure which one was worse. I tried the 2 TBSP psyllium/flax sprinkle.....no impact. I tried the SF Metamucil. This would impact the diarrhea, but wouldn't touch the constipation. And yes, I was definitely eating my vegetables! Yes, I was drinking my water. Yes, I was exercising. Even used stool softeners, to some help. Then I tried the 1 minute flax muffin....1 per day, at breakfast....if it seemed like things might be getting....umm...er....ah....."harder", I would add another half of the recipe at dinner. Things are "going better", so to speak, and I am able to bet back on and stay on LC. For me, it is better to stall, then not to eat right at all. And that seemed to be my options. I am very grateful for this recipe because it allows me to eat right, and to have something fresh and warm and bread-like every day.

I have IBS where I cycle between diarrhea and constipation with constipation dominating. Can't say the flax is helping much but my volume of food is way down and I'm waiting for my body to catch up.

Just thought I'd post an addition to the muffin "batter". Today I tried adding a small amount of Crystal Light Sunrise orange powder. I don't know the exact amount as I just put some in. Maybe 1/2 t ? I also used 1/2 golden flax and 1/2 almond meal. I nuked it in a glad sandwich size container and then toasted it in the toaster. With cream cheese on top and a cup of tea on the side itwas very good.

Thanks, Lisa. I actually had to do some searches on net carbs and such. 2 TB which is what I used in the recipe is 60 calories and 3 carbs minus 3 fiber--so I just put in 0 carbs at Fitday. Hope that was the right way to do it. I'm getting ready to make a brownie type muffin in the morning. I'm craving chocolate.

I made french toast with it yesterday. I made the "muffin" in a square storage container about the size of a piece of bread. Nuked it 1 min, cut in half thru the middle making 2 peices of bread. Mixed up some egg/milk "batter" (use your favorite french toast "batter"), and dipped the slices in it, and fried/grilled. (I used half golden, half dark flax seed meal in this.)

I tried this with almond meal a couple times and didn't like it so much. The first one tasted really eggy. The second time I fed the yolk to the dog and made it with just the white and it STILL tastes eggy. I went back to my flax muffin but one of these days I will try the half flax/half almond meal version.

well I made it with someones suggestion the 3.5tbsp coconut oil, 2 tbsp pumpkin a good shake of pumpkin pie spice an egg a scant 1/4 cup flax meal 1/2tsp baking powder and the egg..Nuked it in a bread sized plastic box 2.5 minutes needed that I guess its all the coconut oil but it was delicious
