monins blackberry syrup muffin

I got my sf monins blackberry syrup yesterday and made a muffin with it this AM. Had to fight my hubby for my half! It's very tasty--still warm and with just a bit of melted butter.

Okay just tried this with chilli and dried onion (small sprinkle) - it probably wouldn't satisfy those who grew up on it - but this tasted to me just like corn bread (I'll admit it has been a while since I had any!!!) I added a little sweetener and did use almond flour - but I loved it!!!

Then I sliced it in half and made a bacon and egg sandwich - very happy girl today!

Wow, this was great! I love how it puffed up in the microwave. I used the original recipe, but substituted 1 T of oil as I was too lazy to melt butter.

Turned out yummy. I ate it with a fork while it was still warm. Very similar to a bran muffin...

Just omit sweet spices and add what you like-garlic powder, onion powder, Mrs. Dash etc. Leave out the sweetener or add a pinch-it's up to your tastebuds.

Sharis! Thanks for the tips. I will try the sesame oil, great idea. So when you make the savory recipe, you're using it in the loaf pan, right? So it makes a better sandwhich? Sounds yummy!!!
Gary, I'm not sure how you feel about teenagers but my dd wants to marry you hehe. She was just sitting here whining about never having anything yummy to eat anymore, so I take the old laptop upstairs and try to give this little recipe a go. I'm fully expecting it to be gross, cuz that's how I psyche myself out, and she's blowing hairballs behind me about how shes not gonna eat it. Well it pops out of the microwave and she smells it, and wabam, she's on it like a rabid dog. And she made me make her another one. She wanted me to tell you she loves you because you just saved her from lo carb hell. So she wanted me to tell you thank you thank you. So thanks

I love you all for this. I really need to try the rest of these. You guys rock!!!

Be careful giving her 2 of these-the fiber in the flax can be quite constipating. She should probably work her way up to 2 and drinks lots of water to move all that fiber along.

Thank you for that Lisa, I didn't know that. The funny thing is and I am sorry for forgetting which poster gave me this idea, but I didn't have any flax meal I only had whole almonds, so I threw them in the old magic bullet and made "almond flour". I didn't think it was going to work but it did.

Now this morning was another story, out of almonds now, I had flax seed, threw that in the bullet and tried it that way, and it also worked. She only ate one this morning though. Wow, I thought the flax would have the opposite effect, glad to know she's not gonna have an awkward day at school.

if you have unsweetened coconut you can magic bullet it too. I make a mix of flax and coconut flour.

Too funny Mom! Yup-you see posts from people overdoing on the muffin because it is soooo good and then they end up with potty issues! Some who are well hydrated have the opposite symptoms.

Hehehe. I'm worried it will make me stall. The funniest thing is yesterday we went to the store and bought some banana extract and walnuts and a host of other types of spices and while we were on our way home she's going through the lists of muffins we can try to make and I turned to her and said, "You know we need to get a life right? I mean here we are having a very animated conversation about the types of low carb muffins we can make. Maybe I need to start dating again?" She's still laughing.

Btw...the banana nut muffin was awesome, the garlic bread, not so awesome blech

Thanks again ya'll are the greatest!

Ah, that's sweet! My partner's daughter is 17 and she LOVES these. They do not cause any problems at all. We eat the savory muffins, sweet muffins and now the chocolate ones.

These have really helped us out too! I'm glad to hear that she's trying low carb (as everyone in my family is).

Good luck!!

Actually that's the funny thing. I was doing lc and had lost about 20lbs the first month and I think she pretty much found them hehe. She was complaining and I told her what I was doing (I started while she was at her dads for the summer) Anyhew she gave me the business about "There's no way eating meat eggs and cheese is gonna make you lose weight" So I told her to try it for a week, she did and now she's lost 18lbs and she's about 5 lbs from her goal. So she was dying for something sweet that's why I found your post. And now, I get to make her a banana nut muffin every morning before school.

We did change it up a bit last night and made some garlic bread to go with our dreamfields pasta, and it was really good. Just replaced all the sweet stuff with a little of the oil in the minced garlic, and some onion salt. Made in the micro and then broiled both sides in the oven until it was crispy, then topped it with mozz cheese and it was yuuuuummmmmyyyy.

So again. Thank you!!!!

Pumpkin Muffins?

Has anyone tried to make the 1 minute muffin into a pumpkin muffin. I am not kitchen savvy, so how much pumpkin/pumpkin spice would I add to get the flavor or a "real" pumpkin muffin. Maybe almond flour would be better than flax, what do you think?

I did make them, I replaced the cinnamon with pumpkin spice, and used the recipe for cream cheese icing, it was AWESOME!!! Btw, that would be 1 tsp of cinnamon. Also you can do 1 tsp of pumpkin spice and 1/2 tsp of cinnamon and it's really good that way as well _

And if you are worried about the carbs, mix flax meal with your almond flour 1/2 and 1/2

Thanks A Million

Finally got all the stuff to make the muffins and presto change-o I made one I am not a cooker and I was able to make this with no problem. Thank you soooooooo much! I am making them at work because that's where I spend most of my time for now.

I've had 3 already since last night; 1 last night, one this morning, 1 this evening and I'm concerned about the whole stall/constipation topic

Anyone know info on limits or limitations to make sure neither happen?

I'm looking forward to having a sandwich with this stuff one day I miss sandwiches and I don't like low carb bread yuck
