I wonder if you could use soy protein i place of flax and almond flour as i have neither. Also has anyone tried the splenda packets for coffee one of them comes in a chocolate mocha flavor. That might be good to add too.

Made the 'bread' today and had a grilled cheese, YUM

Question: does the golden flax have a less grainy taste? I'm using the regular flax meal.

It tastes a bit grainier but I'm weird, I think the almond meal is more grainy than the golden flaxmeal

Just tried this recipe and really liked it; however, it was a little bland for my taste. I've never used flax meal before so I don't know if it's just an acquired taste or if I need to experiment with other seasonings. I made it in a bowl and then sliced in half, like a sandwich. Was really pleased with the texture and how it held up. Thanks for sharing!

Going to try a savory one for lunch today.
Oh,and I only had one of the muffins here and there last week (I think 2 days only) but want to see if it stalls me or makes me gain. Sooo...I'm ginny piggin myself to have 1 muffin everyday. Wether its for breakfast or lunch and see what happens. Seeing as they are delicious~I won't mind this experiment at all.

I got this one off another board, and it is the bomb! I'm making them now in larger amounts and nuking one at a time in straight sided cereal bowls. Then I refrigerate them in a bag and nuke for a few seconds before eating. I cut them in little pie wedges! I'm going to try today with savory spices, no sweetener, and some grated cheese on top. Follow the instructions for beating these. It helps a lot. I'm beating mine with the mixer.

Low Carb Forum Mega Muffin - Great for Induction!
Hi Everyone,

I have been playing with various recipes already posted on here.. so I must give credit where credit is due.. I started out with the Mock Danish Which is great for induction, but a little too sweet and eggy sometimes for me. Then I got great inspiration from the Flax Bread recipe, and the Bowl Muffins Which are all great recipes... I have kinda combined them all including the information about Coconut Oil and general posts people made when commenting on these recipes. Hence the name... it is truly a Low Carb Forum Muffin!

Recipe:
1 Large Egg
4 Tbsp Milled Flax Seed
1 oz Cream Cheese, cut into approximate thirds
1 packet of Splenda or equivalent type of sweetener (or to taste)
1/2 tsp Vanilla
1/2 tsp Cinnamon
1/2 tsp Baking Powder
2 Tbsp Coconut Oil (or Butter) - For those of you used to taking CO it works great in this recipe, for those of not using CO, Butter works just as well, for those of you wanting to incorporate CO into your daily regime, this is a great way to start, but after reading the posts, I strongly suggest you start out with only a tsp of CO, and then make up the remaining 2 TBSP with Butter.. and gradually increase the amounts of CO while decreasing the amounts of butter... so that you still have 2tbsp of either CO, Butter, or a combination of both.

In a cereal bowl, I put in 1 of the thirds of Cream Cheese, and the 2 TBSP CO (or Butter), then nuke it for a short time, 10 - 15 seconds is plenty.

While this is nuking, I lightly butter (not counted above) the sides of my container that I am going to cook this in. I personally love to use a plastic one I have that is about 3 X 5 inches wide X length by 3 inches deep.

Take your bowl and add to it: the egg, flax seed, Splenda, cinnamon, and the vanilla. I mix this up with a fork.. and I mix it for almost a minute, as your mixing you will notice that your eggs will go from being "eggy" to being more "creamy", for my personal pallette I think this makes a big difference in the end result. Once done mixing I throw in the Baking Powder and give a last mix incorporating the Baking powder.. again I just feel it helps the muffin rise a bit higher.

Pour the mixture into your buttered baking container. Again with the one I use it fills it about 1/2 way. Then I take the remaining Cream Cheese thirds and I set them into the middle of the batter pushing them lightly so that the batter comes up along the sides of the Cream Cheese a little bit.

I nuke this on high for 2 minutes... the batter cooks and rises up and over the Cream Cheese and will come up about a 1/2 inch over the top of my container...
This muffin reminds me of a great seven grain one I used to purchase from a local coffee shop... I can't wait till I am moving into Owl, so I can add nuts, SF Jam, etc...

Nutritional Information (My best based on reading labels):

1 Large Egg ( 74cal, .4 carb, 6.29g protein, 5g fat)
1 oz Cream Cheese (98cal, .74 carb, 2.11g protein, 9.76g fat)
1 packet of Splenda or equivalent type of sweetener (or to taste) (1 net carb)
1/2 tsp Vanilla
1/2 tsp Cinnamon
1/2 tsp Baking Powder (It says none, but I count a .5 )
2 Tbsp Coconut Oil (or Butter) No carbs in either
4 Tbsp Milled Flax Seed (120cal, 8g carbs all Dietary fibre so Net carbs = 0, 6g protein, 10g fat)

Total Net Carbs = less then 3 (2.64)

I just tried the muffin from the beginning of this post and i must say i was impressed. i didn't think i would like flaxseed, but it was really good. I added in banana extract, hazelnut sf syrup, and in place of splenda i used hazelnut splenda and it was so good tasting. Thx everyone for sharing these recipes. It has helped me when i am not only hungry but it helps with certain cravings i have

sooooooo delicious! I just made one with extra splenda and banana SF syrup with natural PB...... yum!
Best part also is it only makes one so I can't eat 5, like I normally would!

why did yours turn out that golden color? My was the color of the dark flax. Did you use a golden flax or something?

Mine was dark too.


ALSO: wanted to share that the muffins saved me this weekend. We had to stay in a hotel this weekend and I made a couple to take along, and all they had at the breakfast bar, was potatoes, danish, bagels, and english muffins. NO protein....so I snagged a cream cheese or two and had my muffins in the room with coffee.

The muffins keep great in a ziplock bag, even a day or two old.

Yes! I totally agree. this is the best 'snack' food , healthy and not many carbs.

Love it. Eat it daily, with cc or butter sometimes mac nut butter some times plain. Oh and I omit butter sometimes. Isn't a big difference imo.

I have chocolate protein powder and usually make that cookie thing but i am going to try a chocolate muffin and then the grilled cheese. My 2 fav foods that i love and always crave either when i watch what i eat or diet is grilled cheese and PB&J I could live on those, so this should help

I think there is - I eat dark flax with protein powder for my morning cereal - has a nuttier flavor and seems to be coarser. Golden flax is milder and I occasionally use that for the muffins, but having developed a "taste" for flax, I'm more inclined towards the darker.

Hi everyone!
I have been reading all the post's on this muffin. I made it the first time and didn't like it. I made it again using the cinnamon and thought it was okay, now this morning I went to make the savory kind and all it taste like to me is egg. I'm wondering if I can double the recipe and just use the one egg. I couldn't stand the smell of egg because it smelled over cooked.

Does anyone have suggestions on this and what am I doing wrong. I feel that I am mixing it thoroughly, but when I remove it from the cup, I can still see the streaks of egg and that's what's smelling.

Diana - maybe you can use an electric mixer for the egg before you add it. I honestly don't taste the egg at all, but if you think it's related to mixing, then maybe using an electric mixer will help. Worth a try!

What protein powder and what is your recipe, sounds good!

Also, Diana try using a smaller egg, or part of egg, yesterday I used a double yolker and it was way too much egg, eatable, but eggy.

I mix whey protein (Vanilla - experiment with different types, including Designer Whey, EAS, other varieties) and combine that with equal amounts of flax meal (I prefer dark), add some cinnamon, nutmeg, or whatever floats my boat that week - and keep it in a zip lock bag in the freezer with a 1/3 cup measuring cup. Each morning, I scoop out a heaping scoop, add water (you have to experiment with this to find your own personal preference of consistency) and then nuke it for 30 seconds to a minute. Add half and half on top and enjoy.

I eat this daily at work, unless I work from home when I do the 1 minute muffin. No, it's not the most exciting and interesting, but it's what I've taught myself to expect for breakfast. I do it more by habit than anything else - no decisions, preparing and I know it will hold me over for the morning.

1-Minute Chocolate Muffin


Oh yum, we had this twice over the weekend. One night we used Flax, the second night we used Almond Flour. The Almond Flour has more of a cake quality and we liked it best. Of course used Lisabinil's idea with the SF Chocolate Candy for a lava-cake experience!

1/4 Cup Almond Flour
1/2 tsp Baking Powder
1 Tbsp Splenda (more or less)
2 tsp. Torani Chocolate SF Syrup
1 Tbsp unsweetened Baking Cocoa (mine has 1 carb per Tbsp)
1 Egg
2 tsp. Butter or Olive Oil
2 pieces Dove Chocolate

Mix the dry in a large coffee cup; add egg and SF Syrup (syrup is optional). Place a piece or two of SF chocolate (I've used Dove and Chocoperfection) on top and microwave for 50-seconds to 1-minute.

The candy will melt inside of the cake and is soooo good!

1 minute pina colada muffin

Hi- I tried the 1 minute chocolate muffin last night and loved it. I decided to try a pina colada muffin this morning. It was great and my hubby ate half of it.
Here it is-
1/4 Cup Flour mixture(Actually I used a comb. of almond flour, flax meal and carb quik to equal 1/4 cup)
1/2 tsp Baking Powder
1 Tbsp Splenda
2 tsp. Baja Bob's Sugar Free Pina Colada Mix
1 pinch of ground up unsweetened coconut
1 Egg
2 tsp. Butter or Olive Oil (I used olive oil

pinch on grated unsweetened coconut for the top of the muffin

Mix the dry ingred. in a large coffee cup; add beaten egg and pina colada mix. Place grated coconut on top of mixture and microwave for at least 1 minute. Check at 1 minute and see if it needs another 30 seconds. My micro is old and it usually takes 90 sec. for my muffins.

1 minute chocolate chip muffin

The regular 1 minute choc. muffin is yummy....but today I made a regular muffin without the cocoa, but put in some pieces of sf chocolate candy bar (chocoperfection)
yum-yum.

I'm working on a 1 minute jalapeno muffin- fashioned after jalapeno cornbread-my 1st one was delicious...

I had some flax cereal and used that with a little protein powder. I made it in 2 smaller cups and they are delicious, like everyone else I shall now be playing with this recipe and using it often.
