Anytime you increase your fiber be sure to drink your water too. Fiber will kinda stop the plumbing up if you don't get plenty of water.

Brandy you might even try buying whole almonds and grind them yourself.
Thats what I and it's cheaper. I buy a bag of whole almonds from Sam's Club
and just grind them on a small coffee grinder, you just have to be careful and not to overgrind so you don't end up with almond butter.

OMG I made one this morning, after reading all the thread last night. IT FELT LIKE CHEATING! It was so easy and really good.

I'm really hoping that I can remain eating these with no problems. I would like to make the savory ones too.

Question: How many times a week/day do you eat flax meal? How much is too much? Or is there too much? Like if you had a muffin for breakfast and a savory one at dinner, daily. Is that too much?

Hi Bethy:

I wouldn't think it would be too much, but everyone is different. The first time I made the 1-minute muffin, I thought I was cheating too! When I tried Sally's version with Almond flour, I REALLY thought I was out to breakfast and having a no-no!! Very good!

Each 1-minute flax muffin is only 1.5 net carbs. I wouldn't think it would be too much to have two.

I think I'm going to follow one of the earlier poster's idea and make the sandwich savory muffin (3-minute on another of my threads) for a meatball sandwich!!

I'm going to try the sandwich savory muffin today. Did you make yours? and a meatball sandwich sounds awesome!

I made the 1 min. muffin this morning, actually 50 sec in my microwave, and added 1/8 tsp banana extract and a couple slivered almonds broken up. It was ok, but not the banana bread I was hoping for ! LOL

I also used to make zucchini bread, I'm going to try adding some when my zucchinis are ready to harvest from the garden. I'll chime back in when I do that to let everyone know if it worked.

Yum, the Zucchini bread sounds really good. I wonder if Torani or DaVinci makes a SF Banana syrup? Another thought, would it taste more like banana nut if you used the almond flour, instead of the flax? I would think so.

Also, yes made the meatball sandwich and posted pics and recipe on another thread here.

Thank you so much for posting this recipe. I made these tonight and they were wonderful! They will be perfect for breakfast. I put individual servings of the dry mix in sandwich bags (enough for my work week) so all I have to do is add the egg and butter - nuke them & I am out the door! Thanks again!

I really like the flax meal muffins but if your hoping for banana bread try it with almond meal only no flax, it will make a huge difference. I used the banana extract and they were wonderful.

I tried this the first time last night as well! I added a little cocoa pwder to mine and a splash of sf vanilla syrup. Topped it with cream cheese frosting and it was so good. Will definitely have to make this again, and again, and again, and again.

I put a mug together with the dry ingredients for my hubby last night, so when he got up all he had to do was add the egg and butter, and micro it.

I have been making these everyday. They are delicious. I leave out the butter or oil and add 1T of oat fiber. The texture is better with the oat fiber. This makes the reipe lower fat, lower calorie, and higher fiber.

OMGosh! I'm in LOVE!
All these years Ive been a member here and Ive never made these.
Then realized I had everything I needed so might as well try them. This is a LC gift from above! I mean it has everything you want. Its soft and warm like a muffin,its good,its LC,it has fiber and it is soo quick!!

I only have 1 syrup flavor left so decided to go with it.
Instead of 1/4 c flaxseed meal~I cut it in 1/2 with almond meal,used pumpkin pie spice & Davinci banana syrup. I wasn't sure how much of that to use so I tried 1 tsp. I might put more next time to make it a bit sweeter but I'm loving it right now with butter on top. I can't believe how huge it came out too!!!
Hubby is gonna love this one!

Oh - this was good - much better than the 1 minute chocolate cake - this really had substance. I had the dark flax, so made for a bit heavier muffin - makes me want to try the golden flax. Darn - just put in a netrition order about an hour ago.

I tried to make the Chocolate 1 Minute Muffin (or was it called 3 minutes?) a few weeks ago and I didn't have any Splenda packets so I tried to wing it and it ended up being too bitter and not sweet enough. It was my first attempt at baking anything with Almond Meal so I was discouraged.

I just decided to give this recipe a shot and made it. I used Almond Meal instead of the Flax. I omited the Splenda because I do not have packets (just bulk) and instead added SF Raspberry Davinci's. I also left out the cinnamon. I used 1 1/2 Tbsp. of melted butter as well. I then made a little cream cheese frosting and left out the Splenda again but instead added just a little Vanilla Davinci's - wasn't happy with the flavor (tasted too much like regular cream cheese) so I added a very tiny amount of the Raspberry and it is really yummy.

The whole thing looks like one of those little strawberry cakes with light pink frosting. So pretty and really yummy too! The smell of the cake part isn't so great though so I'm trying not to smell it.

I basically make the OneMinuteMuffin with a tbl of Wonderslim Wonder Cocoa (1 net carb per tbl) and use a Davincis or Toranis-sf Chocolate Macadamia Nut is awsome and after everything is mixed and before I nuke it I float 1 square of the 85% Lindt Chocolate in the middle. It makes a chocolate lava OneMinuteMuffin! I don't use the almond meal in this only golden flaxmeal.

I have a question?

Is this something we can have everyday? Like 1 for breakfast? I forgot to weigh the very next day after eating one so Im not sure if it will hinder my weight loss and would hate to eat 1 everyday to find out it does slow a person down. Does anyone have them daily? Are you losing steadily? I don't need 5 lbs a week (although thats would be nice) but if I can have this daily and still lose my normal 2 or so a week~I'm good to go!
BTW,those chocolate ones sound awesome!

I eat one a day, mostly chocolate flavored. I have been losing weight slowly but steadily. I'm down to 112! I don't find the flax muffins to be any hindrence to weight loss.

This is the first time I have ever felt compelled to take a picture of my food.

Whoever mentioned grilled cheese...this is all your fault!



Here is the recipe I used...

1/4 cup Flax Meal
1/2 teaspoon Baking Powder
1 Egg
1-2 teaspoons Butter (I used coconut oil but won't do it again because I tasted the coconut)
pinch of onion powder

Mix the dry ingredients in an appropriate size microwavable dish. I will add a bit more spice next time to cover the egg smell. Perhaps some dry mustard and onion powder with a pinch of salt. Add egg and butter; mix well. Microwave for 1-minute (mine was about 1 1/2 minutes. It pops right out. Cut in half for 2 slices. Then I made my sandwich like a grilled cheese.

I just posted this in my journal but felt compelled to post here in praise of the one minute muffin and a big thanks to whomever came up with this...

The other night I finally got around to making the one minute muffin... OH MY... can't believe I've waited so long to make that... it was amazing. I do have to note though that I made it with almond flour instead of flax meal (which I then tried for the first time this morning). I do like both versions, but the almond flour is sinful... so good... tasted just like a muffin. I had a little butter and raspberry jam on it and just about passed out from the excitement . I can see making it into french toast even. I bought some coconut extract and am going to add that along with some shredded coconut, and will also try making one with banana extract and pecans... or maybe fresh blueberries... endless variety of things you can do with it. If you haven't already tried this... you really have to... try both versions... but definitely try it with the almond flour (a few more carbs but definitely worth it)........... .

I'm glad you liked them I also absolute LUV making them with Almond meal, I've made them with bannana extract and also with cocoa, I used SF Torani's as as sweater, yummy yummy

I like the flax one to, I love the almond meals so much that I tend to do them more with the almond meal.

I don't have any flax meal left, so I just tried the almond flour version, and oh is it yummy! The possibilities are endless with this thing. I put a little coconut extract in it, then topped it with butter and SF blueberry jam. Wonderful! I keep having to convince myself that I wasn't cheating.
