Has anyone NOT tried the One Minute Flax Muffin?
If you like the Flax Muffins, you will definitely like this. I know it's been posted before, but it is worth repeating. I will never bake muffins again
This is so easy and so good. As coconut oil seems to be the craze lately, I just tried substituing 1 tsp. coconut oil for the butter and it came out great. I also like a muffin sweet so I used 3 pkg. splenda and it was just right for me, not too sweet IMO. Here's the recipe:Flax Muffin in a Minute (suitable for Induction)Serving Size: 1 1/4 cup flax meal 1/2 teaspoon baking powder 1 packet splenda packet 1 teaspoon cinnamon 1 large egg 1 teaspoon butter Put the dry ingredients in a coffee mug. Or a bowl for a different shape. Stir. Then add the egg and the butter. Mix. Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

I will try this as a dessert tonight (i like sweet too), I have been looking for more to do with my Flax meal. So far I have only used it in stir fry.

ive printed the recipe at least 3 times but havent made it yet. keep getting baking soda and baking powder confused and when i look in the cabinet to see which one i have, i forget what im supposed to be looking for.
and i bought a bag of flax that i have no other idea what to do with. lol |

I haven't tried it yet. I have a dozen flax muffins in the freezer. Right now, it's easier for me just to grab one of them and nuke it, rather than stir up all the ingredients.

In stir fry it makes a nutty flaovor, which is great for asian flair (I use peanut oil in stir fry too) I just add a 1/4 cup about 3 min before time to eat.
I looked up all the ingredients to get a better handle on the counts. I am on kimkins and trying to make sure of my total carbs. I come up with 192 calories, 10 carbs, 5.2 fiber, and 11 gr protein. The cinnamon has 2 carbs per tsp and the splenda is .6 per pkt.(I used 2), then there is 0.6 in each 1/2 tsp baking powder too. Just thought I'd let you know that sometimes there are more than at first appears. 10 total carbs or 4.8 net carbs

Thanks for the recipe... However, honestly it's easier for me to bake a batch and just microwave 1 or 2 when I want them...
My mornings are way too hectic to make up muffins one at a time. However, life changes, so you never know if I may have time for this in the future.... |

I make mine with cocoa powder and I use baking soda instead of powder. I top it with one ounce of cream cheese, too.

I use 1 1/2 tbl and include the carb count-but I always add vanilla extract as cocoa powder is bitter. Almond extract is also good.

Sometimes mine are thick and then I just add another tbl of melted CO or melted butter. I usually always start out with 2 tbls melted of either and don't have this problem. You just might have to nuke the thicker for less than a minute so it doesn't dry out. I just noticed the recipe above is wrong-you need 1 or 2 TABLESPOONS of melted butter or CO not tsp-it will be too dry.

Thanks for the reminder for this recipe..
I made 2 this morning..Both were made in the 2 cup measuring cup..Zap about 1 minute 15 secs..Then I sliced it in half and toasted it in my toaster oven to dry it out a bit.. The second one I added 2 paks of Splenda and some raisins..and toasted it and then spread cream cheese on top of it.. |

So...this should have 1-2 tablespoons of butter or other fat and not 1 teaspoon? Do you think it would be okay to use the 1 tablespoon of fat and 1water? That would change calories significantly.
And each muffin is about 200 calories and about 4-6 carbs? Is that adjusted when you use the 1 or 2 tablespoon(s) fat? Sorry....just curious. |

When I use Sweetzfree or sf syrup & 1 tsp pumpkin pie spice the carb count is 1.11 per ******-omitting the spice it's .61. I would try the 1 tbl butter or fat and if the consistency is good and not too thick you should be ok-if it looks overly dry it shouldn't hurt to add 1 tbl of water. Let us know if you try it.

I made my first one last night and loved them! I was a little nervous, but I was pleasantly surprised. I added a 1/2 pump of SF vanilla DaVinci's and 1/2 teaspoon banana extract. Delicious!

I only used 1 tsp. of butter and it came out great. Flaxseed meal is chock full of oil, so you don't need tons of "other" oils..

I am going to make this recipe as soon as I go pick up some flax meal at the health food store. I need something a little sweet for a snack. How many carbs does a muffin have?
